Aloo masala Cheese Dosa

Dosa is a perfect healthy and filling breakfast or even as a snacks.You can always keep some dosa batter ready and handy in a refigerator,so whenever required you can some quick dosa or idlis for your family.Normally,my kids don’t like idli’s, they like dosa.But I was quiet fed up of making same dosa for them like oats ,bread and plain dosa.So today, I thought of giving a twist to our normal dosa and tried this aloo masala dosa loaded with full cheese. It really turned out good and yummy , they just couldn’t stop eating.
I was quiet happy with my experiments as i also tried making cheesy sandwich dosa and maggie cheese dosa.

Serves : 2

Ingredients

For Aloo bhaji/Sabzi:

2 tsp oil
½ tsp mustard seeds
½ tsp jeera / cumin
pinch of hing / asafoetida
½ onion, finely chopped
1 inch ginger, finely chopped
1 green chilli, finely chopped
½ tsp turmeric / haldi
salt to taste
2 potato, boiled & peeled
¼ cup water, adjust consistency
2 tbsp coriander leaves, finely chopped
1 tbsp lemon juice

For Aloo masala dosa

1 bowl dosa batter / rice /rava/oats/any dosa batter
prepared aloo bhaji/sabzi
2 tsp green chutney / mint chutney / sandwich chutney
¼ cup grated cheese, like cheddar or any other melting cheese
oil as required
salt as required

Directions || How to make Aloo masala cheese Dosa

Take a pan and prepare aloo bhaji or sabzi using your method.
Add dosa to the set dosa batter and mix well.
Heat griddle or dosa pan/tava , sprinkle some water and wipe it off gently using a tissue(this helps to remove dosa quicklyavoiding to stick)
Pour a ladleful of the batter on griddle and spread the batter gently in circular motion.
Spread some butter over it , allow it to melt over dosa
Now spread prepared aloo masala all over the dosa.
Spread green chutney on top of the masala and spred it evenly.
now sprinkle some pepper powder.
sprinkle shredded cheese all over the dosa.
Lastly roll the dosa and slightly press uniformly so that it gets sticked.
Flip the other side and cook for a minute so that cheese melts.
Serve hot with any peanut or coconut or tomato chutney or even ketchup.

Cheese Sandwich Dosa

But I was quiet fed up of making same dosa for them like oats ,bread and plain dosa. So today, I thought of giving a twist to our normal dosa and made a sandwich by adding some potato and tomato filling just like sandwich style and loaded with cheese. It really turned out good and yummy , they just couldn’t stop eating. I was quiet happy with my experiments as i also tried making cheesy maggie dosa and aloo masala cheese dosa.

Ingredients

1 small tomato, thinly sliced
1 tsp pepper powder
1 tbsp tomato ketchup
2 tsp green chutney / mint chutney / sandwich chutney
¼ cup grated cheese, like cheddar or any other melting cheese
oil as required
salt as required

Directions || How to make Cheesy Sandwich dosa

Add salt to the set dosa batter and mix well.
Heat griddle or dosa pan/tava , sprinkle some water and wipe it off gently using a tissue(this helps to remove dosa quicklyavoiding to stick)

Now place sliced potato and sliced tomato on half of the dosa
On the other half of dosa, apply green chutney and spread it out.
also spread tomato ketchup all over and spread it evenly,
now sprinkle some pepper powder.
sprinkle shredded cheese all over the dosa.
Lastly fold the dosa and slightly press uniformly so that it gets sticked.
Flip the other side and cook for a minute so that cheese melts.
cheesy dosa sandwich is ready to be served , You can also serve by cutting into triangle shape.
Serve hot with any peanut or coconut or tomato chutney or even ketchup.

Easy Eggless Chocolate Lava Cakes

Serves 2

Ingredients

2 tablespoons unsalted butter, at room temperature, plus more for greasing custard cups

6 chocolate pieces or 3/4 cup HERSHEY’S CHIPITS Semi-Sweet Chocolate Chips

1 cup maida / plain flour / refined flour / all purpose flour

¼ cup cocoa powder, unsweetened

½ cup powdered sugar

¼ cup oil / butter

½ cup milk

¼ tsp baking soda

1 tsp vanilla extract

½ tsp baking powder

2 small cups (ramekins or aluminium moulds)

1 tablespoons unsalted butter, at room temperature, more for greasing ramekins

4 semisweet chocolate to top

Directions || To prepare Eggless lava cake

1. Preheat oven to 425°F, and grease two 6 to 8-ounce baking cups or ramekins generously with butter.

2. Put a small spoonful of sugar or cocoa powder in each cup, then turn the cup sideways and rotate it so that the sugar is coating the butter all around.

3. Add the chocolate chips and butter to a mixing bowl. Microwave it on high for 30 seconds, take it out and stir it, then
microwave it for another 30 seconds and stir it again. It should be completely melted. If there are still chunks of unmelted chocolate, microwave for another 20 seconds and stir.

4. Next, in a medium mixing bowl, add flour ,cocoa powder , sugar ,baking powder,oil and milk.Beat to combine using a hand mixer or a Beater.
The mixture should be thoroughly combined, smooth, and paste-like, not lumpy.

5. Add melted chocolate to the mixture in the mixing bowl, then use a rubber spatula to gently fold it in. combine it well till it forms an uniform batter with no streaks.

6. Divide the batter evenly between the two greased baking moulds, also place in 2 chocolate pieces in centre of each cup,with the help of spoon, gently push the chocolate pieces inside and cover with batter

7. Then bake the cakes in the preheated oven.Bake for 13 minutes, or until the outside is set and its soft from inside.

8. Let the finished cakes cool down for five minutes when they’re finished baking. Then, flip each cup over on a dessert plate, and tap the bottoms of the cups so that the cakes fall out.

9. Dust with icing sugar. you can also garnish this Eggless lava cake with whipped cream, if desired.

Mumbai Style Pav Bhaji

Pav Bhaji is a popular Indian street food tracing its origin to Mumbai. This specialty dish is popular in every kitchen and by-lane of Mumbai‘Pav’ means a type of soft bread and ‘Bhaji’ means a mix of vegetables and curry.
Pav bhaji is made from a mix of many vegetables which usually include Cauliflower, Tomatoes, Carrots, Peas, Beans, Capsicum etc.
These days Pav Bhaji is available in almost all Indian restaurants and many street side joints.
The cooking process is relatively quick and easy With a mix of several vegetables.
Pav Bhaji is quiet healthy. Though it tastes best with a liberal dose of butter. you can cook it at home with less oil and butter to make it healthier.

Cooking time : 30-35 mins
Serves : 4

Ingredients

For boiling veggies

250 gm Green Peas
200 gm cauliflower
2 medium size potato diced
100 gm french beans
1 chopped Green capsicum
2 small carrots chopped
1 small tomato chopped
1 tbsp pav bhaji masala
2 tsp salt
1-3/4 cup Water (used leftover boiled water from the veggies)

For tempering

1 medium onion chopped
3 small Tomato, chopped
1 tablespoon Ginger paste
1 crushed green chilli(optional)
1/4 tsp turmeric powder
1 tsp red chilli powder
2 tsp garam masala powder
2 tablespoon Pav bhaji Masala
1/2 teaspoon Red chili powder
2 tablespoon Butter or Oil
Salt to taste
2 tablespoon Chopped cilantro leaves
2 tablespoon Lemon Juice – to sprinkle on top (optional)

Directions || To prepare Pav bhaji Veggies

1. Boil all the veggies together in a pressure cooker ,this saves lot of time.
2. add salt , pav bhai masala ,chopped tomato and water.
3. Close the lid and cook it till 3-4 whistles.
4. Do not discard the water from boiled veggies.

Directions || Tempering Pav bhaji

1. Prepare ingredients for tadka.
2. Heat butter and oil (pav bhaji means lot of butter)
3. Add chopped onions…
4. Add ginger paste and saute for a minute.
5. Saute until onions are translucent..
6. Add chopped tomatoes.
7. Cover and cook until tomatoes are tender and soft.
9. Uncover and start mashing up the tomatoes.
10. Add salt, turmeric powder , garam masala powder , red chilli powder and Pav bhaji masala.
11. Saute and mix until well blended.
12. Finally mix in mashed boiled veggies that we prepared earlier..
13. Keep mashing throughout the process..
14. Mix in salt and some butter. As you can see I have added 1 teaspoon of extra
butter to saute my tempering.
15. If you like add more butter, some lemon juice.
16. Sprinkle chopped cilantro leaves and some finely chopped onions..

Rice Moong Dal Khichdi | 8 months + baby

Rice Moong dal khichdi is a nutrition rich food for a baby.I have introduced rice and moong dal water separately to my little one , then once she started adjusting to it , I offered her this khicidi at the age of 8 months. This simple rice dal khichdi can be introduced to babies at the age of 8+ months baby.Its easy to chew and prepared with rice ,moong and ghee and its so delicious and healthy that its a recommended food for babies.

 

Try to feed some small amount first may be 2 to 3 tbsp first and then later you can increase the quantity to a half bowl.

Ingredients

2 tbsp(appox 1/4 cup) rice (surti kolam)

1 tbsp moong dal(yellow spilt beans)

1 teaspoon of ghee

1/2 tsp of cumin seeds

1 pinch hing (asafoetida)

1/2 tsp of turmeric

2 cups water

salt to taste(avoid for baby less than 8 months)

Directions || How to prepare Rice Moong dal khichdi for babies

Clean and wash moong dal and rice well.

Soak dal and rice in water for half an hour.

Heat the ghee in a pan.

Put the cumin seeds and hing till cumin crackles.

Next add turmeric and hing to it,saute for few seconds.

Add soaked rice and dal to it.

Add 2 cups of water.

Cook for few more minutes to get the consistency you like. Add some more water if needed.

Mash the khichdi lightly with a spoon and serve with some more ghee on top if you want.
