Bharli Vangi/Stuffed Baigan/Brinjals


Bharli Vangi or Bharleli Vangi (Stuffed Brinjals/baigan) is a popular Maharashtrian dish and its one of my favorite dish from my
mom’s kitchen. I just love the masala flavors and fragrance stuffed in brinjals, the texture and aroma is so tempting of this dish that you
just can’t resist it. It’s a big hit in my family and among my friends circle. I wanted to share this recipe quiet a long time now.

Ingredients

For stuffing

5 Baby Brinjals
1/2 cup finely chopped onions
1/2 cup roasted n coarsely powdered peanut
1/2 cup finely chopped coriander leaves
1 tbsp minced garlic
1 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp salt

For Cooking

Oil – 2 tbsp
1 cup water

Directions || How to make Brinjal stuffing

In a mixing bowl, add onions, powdered peanuts,chopped coriander,garlic,chilli powder,turmeric powder and salt and mix well.
Keep the masala aside.
Now make two vertical cuts in each brinjal from the top towards the stem but do not cut through and through.
The brinjal must stay intact.
Stuff each brinjal with a pinch of salt and good amount of the masala.

Directions || How to cook stuffed baigans/brinjals

Heat a pan or a wok
Add and place each brinjal into the oil.
Add left over masala and let all the masala along with the brinjals fry lightly.
Over medium heat, keep turning them over at regular intervals so that all sides are evenly fried.
Add about 1 cup of water and close the lid.
Over medium heat, cook covered till the brinjals are tender and the gravy is thick.
Serve hot with rice or rotis.
