Bean and Corn Tacos

A taco is a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling.
You can add great versatility to this dish with variety of fillings like chicken, seafood, vegetables, beans and cheese.
My daughter Nuha relishes her favorite Mexican snack – tacos and hence I set myself the task of preparing home made tacos
So lets dive right in to see how to make the Mexican Tacos.

8 Taco shells (easily available in stores)
1 cup soaked and boiled beans
1/2 cup Spring onion shredded
2 tbsp Mexican tomato salsa
1 cup boiled corns
2 cubes of Low fat cheese
1/2 bunch Iceberg lettuce
1/2 cup Cheddar cheese grated

Directions || How to prepare Tacos

for Tacos filling

In a bowl take the boiled beans, corn ,spring onions and add grated low fat cheese, spring onions and tomato salsa .

Add salt and mix lightly

To prepare Tacos

Warm the taco shells in a preheated 125c oven for a few minutes. If you don’t have oven, micro oven the taco shells for 1-2 minutes till its crispy to eat.

Wash and shred the lettuce leaves

Fill the taco shells till about three fourth with shredded lettuce

Then add a spoon of mixture on top of the shredded lettuce leaves evenly

Top the shells with grated cheddar cheese and little tomato salsa.

Serve immediately.

You can use any type of filling – vegetables, beans ,fish or meat and top it with cheese and salsa.
