Nutella Banana Sandwich

Yes, it?s a Nutella and banana sandwich fried in butter. This recipe is very simple and easy and will make a very enjoyable lunch box meal for your
kids. You can also serve them as after school snacks if you are in real rush.

Ingredients

4 slices of bread
4 tbsp Nutella
2 banana, peeled and sliced
2 tbsp butter

Direction || How to prepare Nutella Banana Sandwich

Spread one tablespoon of Nutella on the face of each slice of bread.
Top one with banana slices and place second slice on top.
Heat the frying pan and melt ½ of the butter. Place the sandwich into the pan and fry until golden.
Add the remaining butter to the pan and flip the sandwich, cooking until the other side is golden.
finally, serve hot or pack for kids lunch box.

Tips

Make sure that you keep the temperature in the pan at a medium to low heat. You don’t want that butter to burn
Serve after leaving to sit for a minute or two as the banana will be really hot.

Mughlai Keema(Qeema) paratha

Mughlai Keema Paratha, which is stuffed with spicy mutton keema (minced meat of a goat) filling,topped with whisked eggs.This authenic paratha is famous throughout India.
I prepared this dish with chicken ‘keema’.The chicken variant can be prepared the same way as normal mughlai paratha.You can check this simple unique paratha with the easy recipe and step by step video.
A must try recipe at home.

Preparation time : 20 mins
Cooking time : 10-15 mins
Makes 7-8 parathas
Serves 3 to 4

 

Ingredients:

For the dough:

2 cups wheat flour
1 cup all purpose (maida) flour
1 tsp oil
Salt to taste
Water

For the filling:

250 gm minced chicken(keema)
1/2 small onion, chopped
1 green chilly finely chopped
1 tsp ginger garlic paste
1 tsp red chilli powder
1/2 tsp cumin powder
1/4 tsp garam masala powder
Half cup chopped fresh coriander leaves
1 egg, beaten
Salt to taste

 

Direction || How to make Mughlai keema paratha

Mix the wheat flour , maida, oil, salt and water and knead it into a soft dough.

Make seven to eight equal portions from the dough.

Keep the dough aside.

In a hot pan, add oil and chopped onions.

Fry onions till it turns golden brown and then add ginger garlic paste, green chilli ,red chilli powder,garam masala powder,cumin powder and salt.

Stir and cook till water has almost dried.

Remove and keep aside.

Now add chopped coriander leaves.

Let it cool for some time.

Now, roll out each portion of dough into a thick small ,round shaped dough.

Now in the center of the dough , place some prepared chicken keema.

Take the edge and start pleating as well as bringing the pleats in the center.

Pressed the pleats in the center and now with the rolling pin , make a round shape paratha.

Heat a teaspoon of oil in a pan or a tawa. Place the paratha on the pan.

Pour some beaten egg over the paratha in the pan. Flip and pour some beaten egg again.

Fry till it turns golden brown in colour.

Your Mughlai keema paratha is done!!
Serve with green chutney.

Sunny side Egg Omlette

Omelette is one of the tastiest ,quickest and the most yummiest dish for breakfast with toasted bread slices.
The traditional Indian omlette with the least minimal ingredients is famous world wide. I have given a slight twist in this recipe by combining the omlette and bread and giving it a shape of a boat 🙂 My kids attacked the boat and finished it off within a sec 🙂
My kids just loved it with some tomato ketchup. You can also roll this omlette in chapati which will served as a light lunch or a perfect dinner.

Preparation time : 10 mins
Cooking time : 5 mins

Ingredients:

2 Eggs
2 tbsp Onions chopped
1 green chilly finely chopped(optional)
1 tbsp milk

1 tbsp finely chopped coriander leaves
Oil for cooking
salt as per taste

For plating

Boiled egg

finely chopped carrots

Direction || How to prepare Sunny side Omlette

Break the eggs directly into a bowl,add onions , milk ,green chilli, salt and chopped coriander.

Beat the mixture well till frothy.

Heat oil in a pan and on a low flame Pour the egg mixture to the pan.

Place the toast bread over it and cook one side of the omlette.

Flip it to the other side slowly.

Gently press it down with a ladle.

Once both the sides are cooked to golden, remove from heat.

Serve hot with Indian roti, bread slice or as it is with any dip.

We enjoyed it with our toast and tomato ketchup,
To prepare Boat (watch the video for the proper instructions)

Cover the bread edges with the omlette and cut the bread diagonally into half.

Give one piece a shape of a boat and another a flag.

Cut the boiled egg into round pieces,take one piece out.

Decorate the plate along with the boiled egg piece and covering it with a pieces of carrots around giving it as shape of sun and rays.

Form the water waves with the tomato ketchup and serve it your kids.

Spongy and fluffy Idli (home made batter)

Idli(steamed rice cakes) is the traditional south India cuisine. I am sharing you the full proof step by step recipe of how to make idli batter at home.Trust me its very easy and there is no rocket science behind it, if you follow the steps correctly ,you will definately land up making a spongy fluffy idli’s at home.This recipe is a very basic recipe which uses only three ingredients namely Urad dal, Idly rice and Salt.
Idli’s goes perfect with sambar , chutneys and even with ketchup 🙂 yes my kids sometimes prefer having it with ketchup.

Preparation time : 3 to 4 hours soak time, 8-10 hours fermentation ,Total : 11-14 hours
Cooking time : 10 mins
Serving 15-20 idlis

Ingredients

1 cup Idli Rice
3/4 cup Urad Dal
water as required
Salt as required

Directions || How to make idli batter

Wash rice and urad dal several times and soak them in enough water for 4 hours.
Even soaking overnight is also ok, but 4 hours is more than enough.
After 4 hours drain the water and add the soaked rice and urad dal in the grinder.
Do not discard the water,you can use it for grinding.
Grind this into a smooth batter adding water in regular intervals.
The consistency after grinding should not be so thick. Add salt and mix it well with the batter.
Keep it in a air tight container and allow it to ferment for 8 to 10 hours.
If its a cold weather, you can ferment it for additional 4 hours.
If the batter is thick you can even add water after fermentation to make it into a right consistency.
You can prepare idlis using stove idli makers or even use microoven idli’s maker as per your choice.
I don’t have traditional idli maker at home , so I always make a microwave idlis but they come out fluffy too.
I set the idlis to 2 minutes and 30 secs , you can try the same ,but if you thick that the idlis are still not well cooked you can adjust the timings accordingly.

Restaurant style Sambar

Sambar, also spelt sambhar, is a lentil-based stew, it is either prepared with one of these vegetables
or a combination of them – drumstick, carrot, radish, pumpkin, white radish, potatoes, tomatoes,
brinjal (eggplant) and whole or halved shallots or onions.Initially I always prepared Sambhar the way my mom used to prepare
maharashtrian style but later discover that using tamarind in sambar gives a perfect taste of tangy flavor to this recipe.
The trial and error was successful and succeeded preparing this restaurant style south indian Sambar.This sambhar I prepared
it to have with Idli but you can also try it with rice as well as dosa.

Preparation Time : 20 mins
Cook time : 30-35 mins
Serves: 5-6

Ingredients

1½ cups of toor dal/yellow lentils
1 tsp mustard seeds
1 tsp cumin seeds
5 – 6 curry leaves
2 medium sized onions thickly sliced
2 medium sized potatoes cut into cubes
3 drumsticks cut into long pieces
1 tsp red chilli powder
1 tsp turmeric powder
2 tbsp tamarind paste (or you can use tamarind extracted pulp)
salt to taste
1 tbsp sambar powder
1 tbsp oil

For tempering

3 red chillies
4-5 curry leaves
a pinch of asafoetida
a pinch of salt

For garnishing

few coriander leaves

Directions || How to prepare Sambar restaurant style.

Washed the toor thoroughly and add the dal in the pressure cooker
Add a pinch of turmeric, 2 cups of water and pressure cook the dal well, mash the dal well and rest it aside.
In a cooking pot, add oil and heat it, add 1 tsp cumin seeds, 1 tsp mustard seeds and curry leaves and allow it to crackle.
Add the chopped onions, potato cubes ,drumstick pieces into it and mix well.
Add red chilli powder, turmeric powder, salt and mix and cook for about 2 minutes on a low flame.
Add 1 tbsp of tamarind paste to the curry , add 1 cup of water and cook the drumsticks for about five to ten minutes.
Add the mashed dal into the curry and mix.
Next add water as per requirement if the sambar is thick.
Add sambar powder and salt according to the taste and let the sambar boil for 5-10 mins.
In a small pan , heat oil and add curry leaves , red chillies , asafoetida and salt.
Fry till red chillies turns color.
Pour the whole tempering in the steaming hot sambar , add coriander leaves and close the lid.
Allow it to cook for few minutes.
Serve hot with idli or rice !!!
