Coconut chutney
When it comes to south Indian cuisine , the first thing comes in mind is dosa idli and chutney.
Preparing coconut chutney is very simple and each region as its own way of making this chutney.
But the chutney prepared in south region is simply mind blowing especially using bengal gram i.e. chana dal
adds a good aroma to this chutney and indeed it tastes just the way its served in restaurant.

Ingredients
1/2 cup fresh grated coconut
1 tbsp dry roasted chana dal(bengal gram)
1/2 tsp jeera(cumin)
2 green chillies
1/2 inch ginger
1 tsp salt
water as required.
For tadka/seasoning
1 tbsp oil
1/4 mustard seeds
1/4 cup urad dal
Pinch of hing
1 sprig curry leaves
1 broken red chilli
Direction || How to prepare Coconut chutney
Blend all the ingredients together with very little water to make a thick paste.
Add salt and blend again.
Heat a pan on a low flame , add oil , mustard seeds , curry leaves ,urad dal
and saute till dal turns golden brown. Make sure that dal should not turn black.
Add hing and salt and saute for 1 minute.
Pour chutney over it and let it cook on a low flame for 1-2 mins.
This chutney keeps good for two day when refrigerated.
Serve chill or room temperatute with idli or dosa,vada, sandwiches or even with plain rice along with sambhar.
Boondi raita (quick and easy yogurt dip)
Raita is a condiment from the Indian subcontinent, mostly an integral part of North Indian cuisine.
In western cuisine raita is mostly called as a side dish or dip, or a cooked salad.
Boondi is a Rajasthani snack food made from fried chickpea flour.
Boondi dipped in curd is know as boondi raita which is a simple and easy dish served with paratha or pulao.

Ingredients
1 cup boondi plain Boondi
1 1/2 cups Curd chilled
1/2 Red chili powder
1/2 Roasted cumin powder
Salt to taste
few Coriander leaves, finely chopped for garnishing
Direction || How to prepare Boondi Raita
First warm water in a pan on stove.
Add boondi in a warm water and let it soak for 9 – 10 mins.
Drain this water and lightly press boondi in palms to squeeze out the excess water,be sure you don’t mash them
In a bowl, whisk the curd/yogurt till smooth,
Add boondi,1/2 tsp red chili powder, 1/2 tsp roasted cumin powder and salt and mix well.
Garnish with chopped coriander leaves. Serve chilled with paratha, pulao or biryani.
Rava Cheese Balls

As its a Ramadan month many of you must be looking out for a new appetizers as well as planning for any iftaari party , you can surely try this out at home.
I got this recipe from one of my friend when we had a potluck lunch in office and trust me they were amazing . I just loved it and wanted to try it from quite a long time at home.
So try this crunchy soft centered cheese balls with a combination of rava/suji. Please check the step by step recipe of rava cheese balls.

Ingredients
2 tbsp butter
2 1/2 tbsp all purpose flour (maida)
1/2 cup milk
3/4 cup rava(roasted)
1/3 cup processed cheese
1 tsp ginger garlic paste
1/2 tsp red chilli powder
1/4 cup finely chopped coriander
salt to taste
oil for deep-frying
To Be Mixed Into A Batter
1 cup plain flour (maida)
3/4 cup water
Heat the butter in a deep non-stick pan, add the milk and allow it to boil well .
Now add the rava in the hot milk and allow to simmer till the mixture thickens and leaves the sides of the pan, while stirring continuously.
Remove from the flame and add ginger garlic paste ,coriander, red chilli powder ,
grated processed cheese (I used cheese spread as i couldn’t arrange any cheese cubes) and finally salt. Allow it to cool completely.
Once cooled, mix well and divide the mixture into 15 equal portions and shape each into a round ball.Dip a few balls at a time in the flour-water mixture till they are evenly coated from all the sides.
Heat the oil in a kadhai and deep-fry the balls a few at time on a medium flame till they are golden brown in colour from all the sides.
Drain on absorbent paper.
Serve immediately with tomato ketchup or any sauce of your choice.
Smiley Sushi Rolls
Sushi is a traditional food from Japan. It is a popular dish in other countries as well, such as America, Canada, and the UK, along with many other countries.
Sushi is made with specially prepared rice and it mostly contains raw or cooked seafood, and sometimes vegetables as well. I tried to prepared homemade Sushi roll
for my kids with raw vegetables. Trust me it’s not only healthy but yummy as well.Since it bought smile on my daughter’s face , i called this dish as smiley Sushi.

Ingredients
4 bread slices
ยผ cup cream cheese
ยฝ cup finely cut green capsicum juliennes (also know as juliennes )
ยฝ cup yellow bell pepper juliennes
ยฝ cup cucumber juliennes
ยฝ cup carrot juliennes
ยผ cup boiled corn
Salt to taste
chat masala powder to taste
Blanched spring onion stalk as required
For garnishing
Salad bouquet
Tomato ketchup as required
Direction || How to prepare Sushi rolls
Cut the sides of the bread.
Flatten the bread with the help of a rolling pin.
Apply cream cheese on this bread.
On these bread slices fill cucumber juliennes, carrot juliennes, green bell pepper juliennes, yellow bell pepper juliennes, boiled corn, salt, chat masala powder and make a roll.
Cut the sides of the roll.
Wrap the rolled bread with the help of blanched spring onion stalk. Make similar rolls.
Place the rolls on the plate and decorate it with Bouquet of Salad (Tie the carrot,cucumber,green capsicum and yellow bell pepper with the help of blanched spring onion stalk).
Decorate with tomato ketchup.
