Healthy and Fluffy White Egg Omelette

Egg White Vegetable Omelet is a great light breakfast or snacks to have, if you’re looking for a low calorie filler
in between meals. I started doing egg whites back in the day when yellow was considered high cholesterol
and therefore bad for your heart. This egg white omelet is an easy and healthy way to kick-start your day.

Here’s the good news about egg whites:

Egg whites are low in calories , protein rich and a fat-free diet especially if you’re trying to watch your weight,
choosing egg white protein over whole egg protein will help you control your calorie intake. One large egg white provides only about 17 calories, according to the USDA Nutrient Data Laboratory. A more reasonable portion size of four egg whites would provide you with 68 calories but can significantly boost your satiety —
which is good news when it comes to healthy weight management. According to a 2010 review published in the
“Canadian Journal of Cardiology,” egg white protein is classified as a valuable, high-quality protein.
Egg whites contain all of the essential amino acids your body needs each day to perform
day-to-day functions and maintain your muscle.

After making non fluffy egg omelettes for a long time and I can’t tell you how
happy I am to finally succeed in making this fluffy egg white omlette.

Ingredients

2 eggs whites
1 tsp olive oil
salt and freshly ground pepper to taste

Directions || How to make healthy fluffy egg white omelette

Beat the egg whites with a beater for 2 to 3 minutes or until the mixture is thick and frothy.
Heat the olive oil in a 10 inch pan.
Add the beaten egg and cook for a few minutes checking with a spatula to see when the bottom of the egg is done.
Flip the omlette on other side and let it cook till done.
Fold the omelette into half and serve hot with a whole wheat toast.
Sprinkle fresh pepper on top if required.

Sunny side Egg Omlette

Omelette is one of the tastiest ,quickest and the most yummiest dish for breakfast with toasted bread slices.
The traditional Indian omlette with the least minimal ingredients is famous world wide. I have given a slight twist in this recipe by combining the omlette and bread and giving it a shape of a boat 🙂 My kids attacked the boat and finished it off within a sec 🙂
My kids just loved it with some tomato ketchup. You can also roll this omlette in chapati which will served as a light lunch or a perfect dinner.

Preparation time : 10 mins
Cooking time : 5 mins
Serves : 2

Ingredients:

2 Eggs
2 tbsp Onions chopped
1 green chilly finely chopped(optional)
1 tbsp milk

1 tbsp finely chopped coriander leaves
Oil for cooking
salt as per taste

For plating

Boiled egg

finely chopped carrots

Direction || How to prepare Sunny side Omlette

Break the eggs directly into a bowl,add onions , milk ,green chilli, salt and chopped coriander.

Beat the mixture well till frothy.

Heat oil in a pan and on a low flame Pour the egg mixture to the pan.

Place the toast bread over it and cook one side of the omlette.

Flip it to the other side slowly.

Gently press it down with a ladle.

Once both the sides are cooked to golden, remove from heat.

Serve hot with Indian roti, bread slice or as it is with any dip.

We enjoyed it with our toast and tomato ketchup,
To prepare Boat (watch the video for the proper instructions)

Cover the bread edges with the omlette and cut the bread diagonally into half.

Give one piece a shape of a boat and another a flag.

Cut the boiled egg into round pieces,take one piece out.

Decorate the plate along with the boiled egg piece and covering it with a pieces of carrots around giving it as shape of sun and rays.

Form the water waves with the tomato ketchup and serve it your kids.

I bet they will just love it 🙂

Egg Broccoli Train Roll(Egg Bhurji)

Egg Bhurji is nothing but a Indian scrambled eggs, its one of the favorite breakfast for kids.This recipe is super easy to prepare but I added just a twist to it by including some veggie like broccoli to make it more healthier. Broccoli egg roll combination works mind blowing , the kids will not find any difference in the taste as such.(For all those veggie moms you can try out this same recipe by replacing the eggs with paneer)To encourage kids to finish their roll especially those fussy kids like my elder one , you can design the rolls in the shape of train and present it to your kids. Trust me they will want it more and more 🙂

Preparation time : 15 mins
Cooking time : 15 mins
Serves: 4 people

Ingredients

4 Eggs Or 200 gms Paneer
2 Onions Finely Chopped
2 Tomatoes Chopped
1 tsp turmeric powder
1 tsp red chilli powder
½ cup broccoli finely chopped.
some ketchup
2 tbsp Oil
Salt as per taste

For wraps/rolls

shredded lettuce(as required)
mozzarella cheese(as required)

Directions || How to prepare Broccoli Egg bhurji

First whisk the four eggs gently with a spoon for about 4 to 5 times. Keep this aside.
Take a pan add oil to it.
Once the oil is hot , turn onions and saute it till golden brown.
Add tomatoes and saute them till tomatoes turns tender.
Add broccoli and saute it till its raw smell goes off and it turns little soft.
Add turmeric red chilli powder and salt and mix it well.
Finally add slightly beaten eggs Or shredded Paneer to it.
Now combine all of them with a spatula or flat spoon.
Keep stirring this mixture until small crumbs are formed.
Continue whisking and stirring them for about 2 to 3 mins more.
Now the egg will start cooking and will soon change its texture and color.
Cook them for more 6 to 7 mins and keep whisking,add some tomato ketchup to it and keep stirring.
Keep for more 2 to 3 mins. Switch off the gas.
Your Egg broccoli Bhurji is ready.

Directions || How to prepare Roll

Place a roti on a clean dry surface, put 1/4th portion of the egg bhurji filling on each roti.

Arrange few shredded lettuce leaves and mozzarella cheese,Squeeze few drops of ketchup and roll it up gently.

Repeat with the remaining ingredients to make 3 more wraps.

You can cut the wraps into two pieces to serve it to your kids as it will be comfortable for them to hold it.

Design the train of the wraps as demonstrated in the video.
