Healthy Mango fudge with Oats and Dates

First of all congratulations to all those lovely expecting mommy’s,this is really a great and wonderful news.I know as a mom that pregnancy is a time of various cravings
and its very important that you choose healthy food for you and your babies.One of friend who is also my regular reader requested me to post few yummy and irrestible quick recipes
which you can have during pregnancy.Since its a season of Mango i wanted to try something with mango which will add a fantastic flavor to this healthy fudge which is made of
oats and dates. Oats are highly rich source of iron and dates are very rich sources of proteins, fiber and many vitamins, while being very low in fat. Both Oats and dates are energy boosters.
You can prepare this fudge and preserve them in a refrigerator and whenever you feel like munching , just open the refrigerator and there you are ,
the yummy mango oats fudge ready to treat you 🙂

Preparation time : 15 mins
Cooking time ; Nil

Ingredients:

1/2 cup fresh Mango pulp(Alphonsos or Kesar)
1 cup dates unseeded
1/2 cup Almond powder
1 cup Oats
2 tbsp honey
1 tbsp Milk
dessicated coconut unsweetened
1 tsp Ghee,to grease the tray

to garnish:

dessicated coconut unsweetened

Directions || How to prepare Mango fudge with Oats and Dates

Add 2 tsp of ghee in a pan and add oats to it.

Roast the oats till it turns dark brown.Don’t over roast the oats.

In a food processor , process all the ingredients.

Blend all the ingredients together until desire consistency.

Take the mixture out in the tray, grease the tray with ghee.

Set aside for 1 hr.You can even refrigerate for 1-2 hrs if you don’t have much time.

You can cut it into rectangular/square or you can even make round balls of it.It can be stored for 2-3 days if refrigerated.

For garnishing sprinkle coconut powder .

Why this recipe is great for expectant Mums

Did you know many cultures and believe dates are a fantastic food to eat while pregnant.
A study from the Journal of Obstetrics and Gynecology in 2011 found the following effects for date eaters too:

First stage labour was shorter
83% of those whom ate dates had their amniotic sac in place at admission (This can reduce the chance of infection).
Cervical dilatation at hospital admission was higher in mothers that ate dates.
Cesarian rate was slightly smaller in the date eating group

Please note the women in the study ate between 3 – 7 dates daily.

It is always essential to remember that anything you consume should be held in moderation. The same applies to dates, and you should only have a handful a day, not more.

Prawns Popcorn(shrimps popcorn)

Prawns Popcorn

Prawns popcorn,this crispy golden fried popcorn makes as an easy appetizer and your guest will love it ,
It can be served with fries,creamy coleslaw or a simple tomato ketchup dip.

 

 

Prep time: 10 mins with 30 mins prawns to marinate

Cooking time: 10-15 mins

Serves: 4

INGREDIENTS

For marination

250gm Prawns washed and cleaned well.
½ tsp. of black pepper powder
½ tsp. of turmeric powder
½ tsp. of red chili powder
½ tsp. of ginger-garlic paste
1 tsp. of lemon juice
1 tsp of mint(pudina) paste.
Salt as required.

For cooking

1 cup all-purpose flour(Maida)
½ beaten egg
1 cup Bread crumbs
Oil to fry.

Directions | How to make Prawns Popcorn

First, marinate 250gm prawns for half an hour in: black pepper powder,turmeric powder,red chilli powder, ginger-garlic paste,
lemon juice, mint(pudina) and salt.
When ready to fry, take ½ cup of all-purpose flour mixed with quarter tsp. of salt and ½ egg, beaten well.

One at a time, roll the prawns in the remaining flour,then roll them once more in the bread crumbs.

This normally gets messy and sticky with hands but once you get hold of it,it will take much time.

Heat oil in a pan, then deep fry them in batches at medium heat until golden and crispy.

After frying, remove from heat and place the prawns on absorbent paper or paper towel to drain out excess oil.

Serve with fries or a simple tomato ketchup dip!!
TIP: Do not over-fry as prawns harden if over-cooked.

Thalipeeth Maharashtrain pancake

Thalipeeth is a Maharashtrain multi-grain pancake popular.The flour is made up of Bajra atta,Chana daal, Urad daal, coriander seeds, cumin seeds, wheat, and rice.
It’s highly nutritious and serves as very heavy breakfast or snacks for your family. Very easy and simple to cook. Check out the recipe below.

Preparation Time – 10 minutes
Cooking Time – 10 minutes
Serves – 2

Ingredients

250 gm thalipeeth flour(easily available in stores)
1 finely chopped onion
2 finely chopped green chilies
1 Tbsp coriander leaves
Salt to taste
Pinch of red chili powder
Warm water for kneading
Oil for cooking

Directions || How to prepare thalipeeth

Take thalipeeth flour ,add onions, chilies, coriander leaves, salt to taste, red chili powder and 1 tsp oil.

Knead the mixture into a dough by adding little warm water at a time. Make small round balls from the dough and set it aside.

To flatten these balls into round breads, take plastic sheets and cut them in large squares from zip lock bags.
If you don’t have any , don’t worry I used aluminium foil.

Place the dough ball on the sheet and using your palm start flattening the dough into a small round circle.
Apply some oil on your palm to avoid the dough to stick
Add about 1/2 tsp oil on the tawa and with the help of the sheet pick up and place the thalipeeth on the tawa/pan. make sure your that the sheet
doesn’t touch the hot pan)
Cook approximately for two minutes on medium heat on both the sides.
Serve hot with any pickle or tomato ketchup.

Chicken Bread rolls

An innovative crispy tasty bread rolls made from mashed potatoes,left over bread slices and chicken curry.
Now no need to worry about your leftovers anymore.
These bread rolls are favorite at my home and I usually pair them with the evening chai as a snack served with tomato ketchup. Hope you too will try this at home.
Its very simple and easy to prepare. Watch out this step by step recipe of these yummy chicken bread rolls

Preparation time : 10 mins

Cooking time : 10 mins

Serves : 4

Ingredients:

1/2 cup left over chicken
8 bread slices( I used brown bread, you can use any breads of your choice)
2 medium size potatoes(boiled peeled and mashed)
1 tsp of ginger garlic paste
1 tsp red chili powder
1 tsp garam masala powder
1 tsp salt
1 tsp soya sauce
1 tablespoon Cilantro (hara dhania), finely chopped
Oil to fry

Directions || to prepare Chicken Bread Rolls

To prepare the filling

Pick up all the chicken pieces from the curry and shred them all.

In a bowl mix all the ingredients shredded chicken,mashed potatoes,ginger garlic paste,red chilli,garam masala,salt,soya sauce,chopped coriander
and knead lightly to form a soft dough.

To prepare the rolls

Trim the edges of the bread slices and set aside.

Fill a small bowl with water to wet the bread.

Dip one side of a slice of the bread lightly in the water. Place the slice between your palms and press, squeezing out the excess water. This makes the bread
moist.
Place the filling in the center of this bread and mold the bread to completely cover it all around, giving an oval shape. Repeat to make all the rolls.

Heat the oil in a frying pan on medium high heat. Drop the rolls slowly into it, taking care not to overlap them.

Fry the bread rolls until they are golden brown, turning occasionally. This should take about two to three minutes. Take them out over a paper towel.

Serve them hot with any chutney or ketchup.
Tips:

Before frying, let the roll sit for about five minutes. This will evaporate some of the water from the bread so that it
absorbs less oil while frying; also making the bread rolls crisper

Moong dal Methi uttapam

Moong_Dal_Methi_UttapamMoong Dal Methi Uttapam is very nutritious and yummy appetizer,it can served as snacks or can be had as light dinner.
This recipe clicked me one day when i was starving , wanted to prepare something quick and could serve as light dinner.
It is quick and simple not only it adds good taste but also adds lot of nutritonal value.
Prep time: 10 mins

Cooking time: 10 mins

Serves:2+ people , makes around 4-5 uttapams.

Ingredients

1 cup each of moong dal,soaked for 4-5 hours. (Alternatively can use 250 grams of moong dal flour..)
2 -3 tsp (ginger+garlic+green chilly) paste.
1 medium size onion chopped.
1 medium size tomato finely chopped.
2-3 springs of Methi leaves finely chopped.
Salt to taste
Oil to cook.

Directions

Grind the Moong dal(Can use moong dal Flour).Add required quantity of water so that the consistency of batter is spreadable(similar to dosa batter)

In it add the onion,tomatoes,methi & ginger-garlic-green chilly paste & mix well,also add salt as per taste & mix well.

Heat Non-stick pan & Spread oil on it.

Pour the batter in the centre of the pan & spread it evenly with a spoon.

Apply oil from the sides of the spread batter for crispiness.

Cover & cook for 2-5 min on both the sides.

Serve with Tomato sauce or any chutney of your choice.

Tips:

Can add more veggies to the batter like capsicum,cabbage or carrots to prepare Moong Dal veg Uttapam.
