Ingredients
For Mango Panna Cotta
Mango Puree
4 medium mangos peeled and pitted
1 tsp unflavored gelatin or agar agar
For milk Panna Cotta
1/2 litre (2 cups) whole milk
1/2 cup sugar2 tbsp powdered gelatin or half agar agar packet
1/2 cups heavy cream
1 tsp vanilla extract
Toppings
1/4 cup diced mango optional
Directions || How to make Mango Panna Cotta
In a sauce pan make a boil water and add one packet of agar agar or add 1 packet of gelatin.
Add mango flesh to a blender and puree until smooth. Set aside.
In a small bowl, add mango puree and add gelatin(half of agar agar) on top and then mix.
Set glasses on an angle in a muffin tin. If the glasses slide, place a small towel underneath to help stabilize.
Pour the mango puree into the glasses to a half inch below the rim. Chill in the same position in the refrigerator of least 2 hours to set.
Panna Cotta
In a medium sized saucepan, add milk and (half of agar agar)or powdered gelatin and wait 10 minutes.
Raise heat to medium, add sugar and stir several minutes to dissolve.
Add and stir in the cream and vanilla.
Once the milk mixture is at room temperature, pour into the glasses enough to cover mango.
Chill for 1-2 hours in a refrigerator until set.Top with optional diced mango. Serve and enjoy!
Homemade Mango Cheese Cake
Mango cheesecake is a smooth , silky fruity , delicious cheese cake made of cream cheese and mango puree. This is the best dessert you can prepare for guests or parties.
I always wanted to try this recipe and today is a special
day as my younger daughter turned 30 months old today. Mango is a favorite fruit and hence I wanted to prepare this special cake on this occasion. And I am glad it turned out good, just a little
glitch here and there as I had no baking pan but I am happy i could prepare it at home.So what are you waiting for , try this mango cheesecake today as Mango season is almost over now.
Ingredients
For the bottom layer:
14 to 15 crackers(I used chocos instead) or hide and seek biscuits
4 tbsp honey or 4 tbsp melted butter
For the middle layer :
8 pieces of Amul/Britania cheese cubes
3/4 cup of refined sugar
3 tsp of vanilla extract
200 gm whipped cream
For the top layer :
4 medium mangoes – yields about 2 cups of mango pulp ( i used Alphonso mangoes. use any good quality mangoes which are sweet)
1 tbsp of gelatin powder(agar agar powder)
2 tbsp water
3 tsp refined sugar
Preparation || How to prepare mango cheese cake:
Top layer :
Cut each mango and make a small pieces of it.
Put the mango pieces in a blender and prepare a mango puree.
Take a tablespoon of unflavored gelatin and combined it with 2 tablespoon of water and give it a mix
till it combines well.Add gelatin to mango puree .
Now add 3 to 4 teaspoon of refined sugar as per the sweetness to the mango puree and stir it once again.
Bottom layer :
To prepare a base ,add crushed biscuits (hide seek) or crushed chocos in a bowl
and add 4 tablespoon of melted butter to it and mix everything together with the help of spatula untill you get a wet sandy mixture form.
Now distribute the crushed biscuits to the baking pan.
Middle layer :
Take 8 pieces of cheese cubes and add 3/4 cup of refined sugar as well as 3 teaspoon of vanilla extract
to it and whisk it well to form a cream (You need to whisk for 10 – 15 minutes ).
Once a nice creamy cheese is form , add 200 gm of whipped cream to the mixture and whisk it again
(you can either use electric whisker or you can do it manually)
To prepare the Cake
Now spoon the creamy cheese mixture over the biscuit layer(bottom layer) and fill the pan untill it covers 3/4 of it.
Next pour the mango puree over the top and spread it evenly.
Chill in the set cake in the fridge overnight or you can set it for 6-8 hours
Once the cake is nicely set , remove it gently from the baking pan and you can decorate it with
any design or message you like to.
Once done , you are ready to serve this yummy delicious mango cheesecake 🙂
Note : Removing the cheesecake from the pan is a bit tricky and a tedious job if you have no right equipment’s.
I went through a challenge while setting and taking it out from the pan as I had no detachable pan. hence i suggest if making the cheese cake for the first time, then i would suggest you to use glasses or bowls,
so that you can just make the layers in them. The mango cheesecake served in individual bowls or glasses, looks pleasing as well as easy to serve.

My kids keeps on demanding everyday for ice creams or kulfi in this hot summer, hence to fulfill their demand I tried out this instant & easy Mango kulfi at home.
You can put your ripe mangoes to full use for preparing this instant mango kulfi to beat the heat. Try out this absolute no cook mango kulfi recipe with minimal ingredients that you can prepare in less than 15 minutes.
Its so easy that you can assign a task to your kids instructing them with the 4 easy steps and you can just guide them.

Ingredients:
3 mango pulps
2 cups of whole milk
3/4 condensed milk of 1 can (400 gms) sweetened
1/2 cup Fresh cream(chilled) OR whipping cream
1/4 tsp Cardamom powder.
5 to 6 Pistachios or almonds – finely chopped (optional)
For Garnishing
few Saffron strands
Directions || to prepare Mango Kulfi
Prepare a mango puree of 3 ripe mango pulps in a grinder.
Place chilled cream in a bowl and beat for 6 minutes Place in fridge till use.
In a grinder , add mango puree ,whole milk , condensed milk and cardamom powder and blend it well till smooth mixture.
Once the smooth mixture is form , add the chilled whipped cream and blend it to mix it well.
Pour the mixture into kulfi molds till 3/4th full. Seal the molds and freeze for at least 5-6 hours.
At the time of serving, Insert sticks into each kulfi and serve.
Note : In case you cannot arrange a kulfi mold.
I decided to prepare Kulfi instantly hence couldn’t arrange any molds , so I used the ice-cream cups and also the ice strays to prepare the kulfi.
Refrigerate it for at least 5-6 hours.
You can also use popsicle molds or earthen pots/matkas to set the mango kulfi.
Garnish it with few saffron strands and sprinkle cardamom powder.
Note : In case to want to try pista Kulfi.
Add finely chopped pista into the mixture and set it into the freezer for 5-6 hours , your pista Kulfi is ready 🙂
Healthy Mango fudge with Oats and Dates
First of all congratulations to all those lovely expecting mommy’s,this is really a great and wonderful news.I know as a mom that pregnancy is a time of various cravings
and its very important that you choose healthy food for you and your babies.One of friend who is also my regular reader requested me to post few yummy and irrestible quick recipes
which you can have during pregnancy.Since its a season of Mango i wanted to try something with mango which will add a fantastic flavor to this healthy fudge which is made of
oats and dates. Oats are highly rich source of iron and dates are very rich sources of proteins, fiber and many vitamins, while being very low in fat. Both Oats and dates are energy boosters.
You can prepare this fudge and preserve them in a refrigerator and whenever you feel like munching , just open the refrigerator and there you are ,
the yummy mango oats fudge ready to treat you 🙂

Ingredients:
1/2 cup fresh Mango pulp(Alphonsos or Kesar)
1 cup dates unseeded
1/2 cup Almond powder
1 cup Oats
2 tbsp honey
1 tbsp Milk
dessicated coconut unsweetened
1 tsp Ghee,to grease the tray
to garnish:
dessicated coconut unsweetened
Directions || How to prepare Mango fudge with Oats and Dates
Add 2 tsp of ghee in a pan and add oats to it.
Roast the oats till it turns dark brown.Don’t over roast the oats.
In a food processor , process all the ingredients.
Blend all the ingredients together until desire consistency.
Take the mixture out in the tray, grease the tray with ghee.
Set aside for 1 hr.You can even refrigerate for 1-2 hrs if you don’t have much time.
You can cut it into rectangular/square or you can even make round balls of it.It can be stored for 2-3 days if refrigerated.
For garnishing sprinkle coconut powder .

Did you know many cultures and believe dates are a fantastic food to eat while pregnant.
A study from the Journal of Obstetrics and Gynecology in 2011 found the following effects for date eaters too:
First stage labour was shorter
83% of those whom ate dates had their amniotic sac in place at admission (This can reduce the chance of infection).
Cervical dilatation at hospital admission was higher in mothers that ate dates.
Cesarian rate was slightly smaller in the date eating group
Please note the women in the study ate between 3 – 7 dates daily.
It is always essential to remember that anything you consume should be held in moderation. The same applies to dates, and you should only have a handful a day, not more.
