Cheese Sandwich Dosa
Dosa is a perfect healthy and filling breakfast or even as a snacks.You can always keep some dosa batter ready and handy in a refrigerator,so whenever required you can some quick dosa or idlis for your family.Normally,my kids don’t like idli’s, the like dosa. But I was quiet fed up of making same dosa for them like oats ,bread and plain dosa. So today, I thought of giving a twist to our normal dosa and made a sandwich by adding some potato and tomato filling just like sandwich style and loaded with cheese. It really turned out good and yummy , they just couldn’t stop eating. I was quiet happy with my experiments as i also tried making cheesy maggie dosa and aloo masala cheese dosa.

Ingredients
1 bowl dosa batter / rice /rava/oats/any dosa batter
1 tsp butter
1 small potato , boiled and thinly sliced
1 small tomato, thinly sliced
1 tsp pepper powder
1 tbsp tomato ketchup
2 tsp green chutney / mint chutney / sandwich chutney
¼ cup grated cheese, like cheddar or any other melting cheese
oil as required
salt as required
Directions || How to make Cheesy Sandwich dosa
Add salt to the set dosa batter and mix well.
Heat griddle or dosa pan/tava , sprinkle some water and wipe it off gently using a tissue(this helps to remove dosa quicklyavoiding to stick)
Pour a ladleful of the batter on griddle and spread the batter gently in circular motion.
Spread some butter over it , allow it to melt over dosa
Now place sliced potato and sliced tomato on half of the dosa
On the other half of dosa, apply green chutney and spread it out.
also spread tomato ketchup all over and spread it evenly,
now sprinkle some pepper powder.
sprinkle shredded cheese all over the dosa.
Lastly fold the dosa and slightly press uniformly so that it gets sticked.
Flip the other side and cook for a minute so that cheese melts.
cheesy dosa sandwich is ready to be served , You can also serve by cutting into triangle shape.
Serve hot with any peanut or coconut or tomato chutney or even ketchup.
3 Palak (Spinach) purees for Baby and Toddler
Spinach(Palak) is a rich source of iron, potassium, and calcium, spinach is highly useful in hemoglobin production and brain development.
Supplies vitamins: Apart from essential minerals, Spinach also provides a good amount of vitamins to your baby’s body.
These include Vitamin A, Vitamin C, Vitamin E, Vitamin K, thiamin, folate etc.
Once your baby turns 8 months old or above, you can easily give spinach to him/her in puree form.
This is the most simple and easiest way to give spinach to the little bud.
How to prepare spinach for your baby food recipes
Spinach needs to be washed VERY carefully,even if its freshly packed , still before feeding baby its needs to be carefully rinse.
The best way to wash fresh spinach is to completely submerge the leaves in a bowl of water and use your hands to ‘swish’ them around, dislodging any dirt.
Then you should drain the leaves and refill the bowl with fresh water, repeating the process until the water in the bowl looks clear.
To cook spinach for your baby…
Trim off the roots and chop up any thick stems .
Place the leaves in a cooking pot, but don’t add any cooking water ,best is to steam the spinach while making purees for babies.

Chop well (if you haven’t already), puree in a blender and serve.
You can introduce these purees into baby’s daily diet.However spinach is not suitable for babies under 8 months old.
So if your baby is younger than 8 months, he’ll have to wait to start these purees

Take out the Spinach or Palak leaves to a Blender and breast milk or formula milk and blend it to a fine puree.
Spinach(Palak) Rice puree
Ingredients
Palak/Spinach Leaves – 5-10
Water – to cook/steam
mashed well cooked rice.
Directions || How to prepare Palak/Spinach Rice puree
Take water in a pot , place colander above it.
Spread rinsed Palak,and steam for 5 minutes following the directions above.
Take out the Spinach or Palak leaves to a Blender and well cooked mashed rice and blend it to a fine puree.
Serve fresh to your little one.
Spinach/Palak and Potato Baby puree
Ingredients
Palak/Spinach Leaves – 5-10
Water – to cook/steam
1 small size mashed boiled potato
breast milk/formula

Take out the Spinach or Palak leaves to a Blender and mashed potato and blend it to a fine puree.

Paneer Cutlets/Paneer Patties
Paneer cutlet recipe, easy to prepare crisp cutlets made with cottage cheese (paneer) ,potatoes and corn mixed with spices,coated in breadcrumbs and shallow fried.
They are a very popular Indian snack dish that can also be served as an appetizer.

Ingredients
200 grams paneer OR 1.75 cups grated or crumbled paneer
3 small OR 1 cup potatoes
1 cup boiled corn
2 green chilies, chopped
2 tsp ginger-garlic paste
1 teaspoon garam masala powder
1 teaspoon red chili powder (lal mirch powder)
1 teaspoon cumin powder (jeera powder)
1 cup rice flour or corn starch
2 tablespoons chopped coriander leaves
1 tsp lemon juice
1 cup breadcrumbs
oil for pan frying
Directions || how to make paneer cutlet
In a bowl, add crumbled paneer,boiled potato and boiled corn.
Next add all the spice – red chili powder,cumin powder and garam masala , green chillies and chopped coriander.
Add 3 to 4 tablespoons rice flour and salt as required. instead of rice flour, you can also use corn starch.
Squeeze some lemon juice and mix everything very well. do check the taste and if required add more salt.
Take a portion of the mixture and shape in to patties.
Next in a plate take some breadcrumbs, place the paneer cutlet on the breadcrumbs coat well.
Make all cutlets this way and coat them with breadcrumbs.keep aside.
frying paneer cutlets:
heat 3 tablespoons oil in a pan or tawa. keep the flame to medium-low or medium and place the paneer cutlets.
when the base is golden, flip gently without breaking them.
fry the second side too without golden. flip a couple of times till the paneer cutlets are crisp and golden.
place fried paneer cutlets on kitchen paper towels to remove excess oil.
serve paneer cutlet hot with any sauce or chutney or dip.
Baby carrot juice
Carrots make a good first vegetable puree as carrots are excellent source of vitamin A,and its rich in fibers which helps infant to have normal bowel movements.Carrots also contain some iron,calcium and Vitamin C. Carrots are also good for your baby eyes. .
You can start giving you baby this juice after 6 months.
While carrot juice is healthy, it should never replace formula or breast milk in your child’s diet,
as your child gets his or her main nutrients from breast milk or formula up until their first birthday.
Carrot juice can be given to babies after the 6th month. About 2 to 4 ounces can be given at the start.
Ingredients required
1 medium size carrot
1/4 cup water boiled and cooled
1/4 tsp sugar(optional)
Directions || How to prepare carrot juice for babies
Wash the carrots thoroughly.
Peel the skin.
Grate the carrot with the handy grater.
Add the grated carrot to a blender,sugar and a bit of water so that you can grind it well.
Take the ground pulp and strain it through a sieve or a muslin cloth.
Dilute the juice with water, especially if you are introducing it to their diet.
The ratio should be 1 parts of juice to 3 parts of water.
For older kids it can be equal amounts of juice and water.
