Left over Bread Dosa/Uthappam
BREAD DOSA / BREAD UTHAPPAM – INSTANT DOSA RECIPE
Do you always seem to have leftover bread lying in the kitchen and you don’t want to waste them, no need to worry !!!
Do you love Dosa and you feel boring and time consuming to make it often at home because of soaking and fermentation process ?
Here is some easy and an excellent way to turn your leftover bread into Instant Dosa/Uthapam.
I tried it out and it really turned out delicious.You too give it a try and do leave your feedback or comment about your experience.
Prep Time : 15 minutes
Cook time : 10 minutes
Serves : 6
Ingredients : Makes about 8-10 dosa
4-6 slices any Bread (White/Brown/Multigrain)
1/2 cup Semolina/Suji Rava
3/4 cup Rice flour
Salt to taste
For Uthappam
2 tsp Chopped coriander leaves
1 small onion – finely chopped
1 Green chilli
Direction || How to prepare Bread Dosa
1) Remove the brown edges of all the bread slices and soak in water for 2-3 mins.


2) Squeese out the extra water.
3) Grind together in a mixer soaked bread ,semolina and rice flour.Add enough water to help grinding. Grind to a smooth batter.


4) Transfer the ground batter to a big bowl ,add salt and mix well. Check the consistency of the batter. it should be pouring consistency.
5) Heat a tawa.Pour a laddle full of batter. Spread it in circular direction to make it to thin dosa.

6) Drizzle few drops of oil around it.Cover and cook on medium flame for abt 1-2 mins.

7) No need to flip over and cook.Once its done, the dosas come out easily from the tawa .
Direction || How to prepare Bread Utthappam
Add onion , chopped chilli and coriander leaves to the batter and mix.
Repeat the above 5 ,6 and 7 steps.

Fold and serve crispy bread dosa accompanied with any chutney or sambhar.
Enjoy the hot crispy Insant dosa at home.
Vegetable Lollipop

ollipops are famous among kids whether it be a sweet candy lollipop or a chicken lollipop. This summer vacation my kids visited their grandma’s place and since my mom is a veg lover,she wanted to try out a lollipops but a veg lollipops for her grandchildren and of course her daugther 🙂
Thanks mom for such a delicious and mind-blowing vegetable lollipop.
So here’s presenting you a secret step by step recipe with pictures from my mom’s kitchen 🙂
This dish tastes spicy & delicious with a combo of any sauce or dips. It can also be served as snacks with hot tea..!
For this recipe, we need cottage cheese i.e. paneer,carrots and all time favorite of kids none other than potato.

Preparation time: 20 minutes
Cooking time: 20 minutes
Serves : 6 people
Ingredients:
6 medium size Boiled potato
2 medium size Carrots (grated)
200 gm Grated Paneer/cottage cheese
1 tsp Ginger garlic paste
1/2 tsp Red chilli powder(optional)
1 pkt Maggi masala/maggi magic cubes (optional)
1 tsp Chat masala powder
1/4 cup coriander(finely chopped).
250 gm breadcrumbs
1 tablespoon Cornflour
Cooking oil for fry
Toothpick/skewer(I used candy sticks)
Salt to taste.
Method :
Fine grate the paneer/cottage cheese and carrots and mix it together.
Peel off the boiled potato and mash it with grated paneer and carrots mixture .
Add ginger garlic paste and all the spices and chopped coriander into mashed potatoes, mix it properly.
Make equal size small oval balls of the mixture like lollipop and keep in refrigerator for an hour.
Mix the cornflour into a bowl and add little water to make thick batter.
Take out the balls from refrigerator.
Take one ball at a time, dip it in the batter and roll over on the breadcrumds till its propery coated.
Heat oil into a pan, Put the coated balls one by one into the hot oil.
Fry it on low flame for 1-2 minute then flip it and cook other side for 1-2 minute(fry till it turns light brown).
Take out on the kitchen towel to absorb extra oil, add the fried balls to toothpick or skewer like lollipop.
(I used candy as skewers and toothpicks both were not available)
Serve hot with tomato Ketchup and chips.

Gulgule (banana wheat fritters)

Gulgule is a very easy and simple recipe in Maharashtra. Gulgule Pua is in the shape of a Pakora. I tried this dish especially for my husband who loves sweet and this is one of his favorite childhood dish.
My kids just loved it , this can be the good snacks for your hungry kids after school.If you like sweet then you will surely like these sweet Gulgule.

Ingredients:
Wheat flour/Atta – 1 cup
Jaggery/Gur – 1/2 cup
Ripe mashed banana – 1
Ghee – 2 tbsp
Salt – to taste
1/2 tsp baking powder
Oil for cooking
Directions || How to prepare Gulgule
Add hot water in the gur and stir till dissolved.

In another bowl, add wheat flour ,ghee, mashed banana , salt and baking powder.

Add the gur solution to it to form a batter of dropping consistency (adding more water if required).
Heat oil and add equivalent to a tbsp of the batter over high heat.
Lower the heat and let the gulgula cook over medium heat.

Remove the fried piece with a slotted spoon.
Increase the heat and then drop as many lumps as come in comfortably without touching each other.
Lower the heat and cook, turning once or twice till brown.
Repeat this process with the rest of the batter.
You can have this yummy gulgule’s hot or at room temperature.

Paneer kathi roll
Paneer Kathi Roll is a delicious tangy and spicy snack prepared by Indian Cottage Cheese i.e. Paneer along with few more vegetables like cabbage,tomatoes,capsicum and onions
Yummy paneer is rolled in to healthy fresh home made whole wheat chapati.
What an amazing roll this is! Check and try this recipe ,it will never fail.
Preparation Time: 20 mins
Cooking Time: 5 mins
Makes 4 rolls
Ingredients
for the Paneer filling
1 cup paneer (cottage cheese) crumbled.
1/2 cup capsicum finely chopped into slices.
1/2 cup cabbage finely chopped shredded
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp ginger garlic paste
3/4 tsp chaat masala
1/2 tsp corainder leaves finely chopped
3/4 tsp garam masala
salt to taste
1 tbsp oil for greasing and cooking
for making Paneer wraps
1 cup onion rings
chaat masala to taste
1/4 cup cheese spread
1 lemon(to squeeze)
1 chopped tomato
4 rotis
Direction || How to make paneer filling
Heat a oil in the pan.Add the crumbled paneer,capsicum,cabbage and ginger-garlic paste and toss it gently for 2 minutes.
Add red chilli powder , turmeric powder ,garam masala and chaat masala and cook it for 1 minute.
Add the chopped coriander,turn off the flame and Keep the filling aside.
Direction || How to make Paneer wraps.
Combine the onions rings with chaat masala in a bowl, mix well and keep aside.
Place a roti on a clean dry surface apply cheese spread all over and put 1/4th portion of the paneer filling on each roti.
Arrange few onion slices,tomato pieces over it,Squeeze few drops of lemon over it and roll it up gently.
Repeat with the remaining ingredients to make 3 more wraps.
Serve it hot with ketchup or green chutney.
Tips
You can cut the wraps into two pieces to serve it to your kids as it will be comfortable for them to hold it.
