Milkshakes (Summer drinks)
Strawberry Milkshake

Strawberries start to ripen as early as March, you can get the juicy red berries fresh as late as October, making summer the perfect season for the most popular berry in the world.
Many people eat strawberries on ice cream, or dip them in sugar. Check out this soothing and refreshing healthy Strawberry milkshake to recharge your energy levels
Ingredients
1 cup frozen or fresh strawberries
2 cup milk
1/4 cup sugar
8 -10 ice cubes
Directions || How to prepare Strawberry milkshake
Rinse the strawberries and then drain them.
Slice off the green leafy part from all the strawberries and then chop the strawberries.
Add the chopped strawberries to a blender jar.
Add 2 cups chilled milk,add sugar as required.
Blend the milkshake till smooth.
Pour in tall glasses and serve strawberry milkshake immediately.
Add few ice cubes if required
Tips
you can also add a scoop of vanilla ice cream or strawberry ice cream and have a strawberry ice cream shake.
Watermelon mint Juice

A watermelon contains about 6% sugar and 91% water.As with many other fruits, it is a good source of vitamin C and is low in fat.Its a cook and refreshing juice best to beat the summer heat. Try this recipe for sure.

Serves : 4
Ingredients
1 medium size watermelon, peeled, deseeded and chopped
1 or 2 tbsp mint leaves/pudina
black salt as required
ice cubes (optional)
Direction | How to prepare watermelon mint juice
All the watermelon and mint leaves in a blender , please do not add water to it.
Blend it well.Pour the watermelon juice in tall glasses and sprinkle some black salt from top.
Add few ice cubes if required.
Garnish watermelon juice with some mint leaves and serve it cool.
Mango Smoothie

Mango is one of famous fruit in India and its one of the richest tropical fruit and abundantly found in summer.
Mangoes are good source of amino acids, flavonoids, vitamin C and E, niacin, beta carotene, calcium, magnesium, iron and potassium. This well-liked fruit is good to eat either raw, ripe or in liquid form.Try out this healthy mango smoothie at home and I am sure it will be loved by you and your family.

Serves : 4
Ingredients
3 Ripe mangoes peeled and chopped
2 cup chilled milk
1 cup Yogurt
2 cup Sugar
8 -10 ice cubes if required.
Direction | How to prepare mango smoothie.
Whisk the yogurt into a smooth paste.
Add the chopped mango pieces milk and yogurt into a blender. Blend till smooth.
Add sugar and blend again.
Put some ice cubes into a glass, pour the smoothie and serve immediately.
Veg Kofta Curry
The word kofta comes from Persian kūfta ‘rissole’: (kuftan) means “to beat” or “to grind”, hence grinding the meat of the meatball.
In India, vegetarian varieties, like lauki kofta and shahi aloo kofta, are popular.
I tried mix vegetable Kofta along with a curry.
You can have the kofta’s for snacks or as an appetizer or try out my quick and easy Kofta curry recipe as a main course.
Ingredients
For koftas
Mixed vegetables (carrots, peas) finely chopped .You can add any vegetables of your choice.
2 medium size Potatoes boiled, peeled and mashed
1/2 cup Fresh breadcrumbs
1/4 cup of Paneer
1/4 cup of cheese
2-3 Green chillies finely chopped
1 tablespoon Ginger finely chopped
1/2 teaspoon Red chilli powder
Salt to taste
Oil for deep-frying
For gravy
1 small Onion
1/2 cup Tomato puree
5-6 Cashew nuts
1 tablespoon Butter
1 inch Cinnamon stick
5-6 Green cardamoms
1 teaspoon kasturi methi
1 teaspoon Red chilli powder
1 tablespoon Coriander powder
a pinch of Turmeric powder
1/4 teaspoon Cumin powder
1/2 teaspoon Garam masala powder
1/2 cup Fresh coriander leaves roughly chopped
1/2 cup Fresh cream
Direction || How to make Veg Kofta curry
To make the gravy, heat oil in a non-stick pan.
Add cinnamon, green cardamoms and cumin seeds and sauté till fragrant.
Add onions and saute till golden brown and then add cashew nuts fry it for few seconds.
Add red chilli powder, coriander powder, turmeric powder, cumin powder and garam masala powder and mix well.
Add coriander and kasturi methi and mix. Transfer the mixture into a mixer jar and let it cool slightly.
Add a little water and grind into a purée. Transfer the puree into a bowl and set aside.
To make the koftas,
Mix together mixed vegetables, potatoes, breadcrumbs, green chillies, ginger, red chilli powder paneer ,cheese and salt.
Heat sufficient oil in a kadai.
Divide the mixture into equal portions and shape them into balls. Slide these into hot oil and deep fry till golden and crisp.
Drain on absorbent paper.
Heat butter in another non-stick pan.
Add tomato purée and cook for 2 minutes. Strain the ground purée and add to this pan.
Add fresh cream and mix well.
Allow the gravy to come to a boil. Simmer for 1-2 minutes.
Transfer the gravy into a serving dish, place koftas over it and serve hot.
Garnish it will Corainder leaves.
Tip
If you have breadcrumbs,you can use bread too. soak one slice of bread in water for like a min or two ,
take it out and squeeze the water out. Add it to the mixture.

Serves: 4 + people
Ingredients
2 medium size boiled and peeled potatoes
½ cup tamarind chutney
½ cup mint coriander chutney
chaat masala as required
1 tablespoon red chili powder
1 onion,finely chopped
1 tomato,finely chopped
1 green chili chopped (optional)
a few sprigs of coriander leaves to sprinkle,finely chopped
1 cup curd
15-16 puris
1 cup sev
1 to 2 tsp lemon juice (optional)
black salt
Directions || How to prepare Sev batata puri
Arrange the puris on a plate , you can decide the puris to be served each plate.
Mix chopped potato, lemon juice,salt and red chilli powder and place this over the puris.
Now add the chopped onions,tomatoes and greed chilies on top of the potatoes over the puris
Now top the puris with mint coriander chutney,dahi and tamarind chutney one on top of the other.Top the chutneys and dahi as per your taste.
Now Sprinkle chat masala and cover all the puris with pently of sev and at last sprinkle chopped coriander leaves,.

Prep time:20 mins and 6-7 hours soaking Sabudana/Sago
Cooking time: 20 mins
Serves: 4
Ingredients:
2 Cup Sabudana/Sago
3 green chillies, chopped
1 Cup roasted peanuts (remove the skins and grind into powder)
1 cup boiled and mashed potatoes
2 tbsp chopped coriander/dhania (optional)
1/2 tbsp lemon juice
¼- ½ Cup oil to fry
Kadai or non-stick pan
salt to taste
Direction || How to prepare Sabudana Vada
Wash the sabudana. Drain and keep aside for about 6-7 hours.
After soaking, the sabudana will have increased in volume, by about 2 times. Set aside.
Mix the sabudana along with all the other ingredients and knead lightly to form a soft dough.
Divide the mixture into 12 equal portions. Shape each portion into a round and flatten slightly.
Deep-fry the vadas in hot oil until they are golden brown in colour and drain on absorbent paper.
Sabudana vada should be crunchy on the outside and soft inside.
Serve hot with green chutney or Dahi.
Tip
The frying oil needs to be sufficiently hot, or else the Vadas will turn out greasy and may break into pieces while cooking.
