Mexican rice with black beans

Mexican food is one of the most popular types of cuisine,it originates from the regions of Central America and South America.


Mexican rice is among the most popular food items when it comes to choosing among the numerous delicious types of dishes from the Mexican food menus.
Are you craving for home made mexican food with little desi tadka , here goes the simple recipe , quick and easy
prepared with Mexican beans and rice dish topped with cheesy creame,avocado and veggies,so ready for your Mexican fiesta.

Cooking time: 15 mins
Serves: 4

Ingredients

1 large green pepper, chopped
1 large red pepper ,chopped
1 large onion ,chopped
1 medium onion, finely chopped
1 cup diced tomatoes, undrained
1 cup kidney beans, rinsed and drained
6 cups brown rice,soaked in water for 2 to 3 hours
1 teaspoons Worcestershire sauce
1-1/2 teaspoons chili powder
1 teaspoon Coriander powder
1 teaspoon pepper,crushed
5-6 cloves of Garlic , finely chopped
1/4 cup shredded cheddar cheese
1 cup reduced-fat sour cream
1 cup of avocado guacamole
2 springs of green onions, chopped
3 tablespoon canola oil

Directions | How to make Mexican rice with black beans

In a small nonstick pan,heat oil over medium-high heat. Add onions,red pepper,green pepper stir until tender.Set it aside.

In a large nonstick cooking pot add oil over medium heat , then add chopped garlics ,onion and stir until onions cooked or tender.

Then add crushed pepper , coriander powder and red chilli powder. Stir it till the masala gets well cooked with beans.

Stir in tomatoes, beans, Worcestershire sauce and then add rice and using very little water(around 1 cup) bring the rice to a boil.

Reduce heat; simmer, covered, 7-9 minutes or until heated through.

Top with fried vegetables,cheese, sour cream , avocado guacamole and green onions.

Palak (spinach) chicken curry

Palak ChickenSpinach (Palak) along with other green leafy vegetables is rich in iron.Lets try out this iron rich recipe with chicken.

Prep time: 30 mins

Cooking time: 30 mins

Serves: 4

Ingredients

To Marinate chicken
1/2 kg of boneless Chicken cut into 12 pieces
2 teaspoons Ginger Garlic chopped
1/2 cup Dahi
To prepare gravy

1 bunch of fresh spinach leaves (palak) chopped
1 large size Onion finely chopped
1 small size tomato finely chopped
1 small Green chillies finely chopped
1 teaspoon of Red chilli powder
1/2 teaspoon Garam masala powder
1/2 turmeric powder
1/2 teaspoon Coriander powder
1/2 teaspoon Cumin powder
1 cinnamom stick
2 to 3 green cardamoms
1 to 2 cloves
1 large size bay leaf
Salt to taste
oil for cooking

Direction || How to prepare Palak(Spinach) chicken curry

Marinate the chicken with Salt , ginger garlic paste and Dahi and keep it aside for some time.

Meanwhile boil the chopped palak in the hot water.Keep it aside to cool.

To make the gravy, heat oil in a non-stick pan.

Add bay leaf,cinnamon, green cardamoms and cloves and sauté till fragrant.

Add onions and saute till golden brown and then add chopped tomatoes fry it for few seconds.

Add red chilli powder, coriander powder, turmeric powder, cumin powder,garam masala powder and boiled palak and mix well.

Transfer the mixture into a mixer jar and let it cool slightly.

Add a little water and grind into a purée. Transfer the puree into a bowl and set aside.

Again add a little oil in a non-stick pan and mix the puree and marinated chicken.

Cook both the puree and chicken well till the chicken is tender.

Serve it hot with any green salad or carrots or chopped Onions.

Tip.

Don’t over boil the palak ,the longer you cook dark, leafy vegetables, the more nutrient loss they experience.

Veg Kofta Curry

IMG_1070The word kofta comes from Persian kūfta ‘rissole’: (kuftan) means “to beat” or “to grind”, hence grinding the meat of the meatball.
In India, vegetarian varieties, like lauki kofta and shahi aloo kofta, are popular.

I tried mix vegetable Kofta along with a curry.
You can have the kofta’s for snacks or as an appetizer or try out my quick and easy Kofta curry recipe as a main course.

 

Ingredients

For koftas

Mixed vegetables (carrots, peas) finely chopped .You can add any vegetables of your choice.
2 medium size Potatoes boiled, peeled and mashed
1/2 cup Fresh breadcrumbs
1/4 cup of Paneer
1/4 cup of cheese
2-3 Green chillies finely chopped
1 tablespoon Ginger finely chopped
1/2 teaspoon Red chilli powder
Salt to taste
Oil for deep-frying

For gravy

1 small Onion
1/2 cup Tomato puree
5-6 Cashew nuts
1 tablespoon Butter
1 inch Cinnamon stick
5-6 Green cardamoms
1 teaspoon kasturi methi
1 teaspoon Red chilli powder
1 tablespoon Coriander powder
a pinch of Turmeric powder
1/4 teaspoon Cumin powder
1/2 teaspoon Garam masala powder
1/2 cup Fresh coriander leaves roughly chopped
1/2 cup Fresh cream

Direction || How to make Veg Kofta curry

To make the gravy, heat oil in a non-stick pan.

Add cinnamon, green cardamoms and cumin seeds and sauté till fragrant.

Add onions and saute till golden brown and then add cashew nuts fry it for few seconds.

Add red chilli powder, coriander powder, turmeric powder, cumin powder and garam masala powder and mix well.

Add coriander and kasturi methi and mix. Transfer the mixture into a mixer jar and let it cool slightly.

Add a little water and grind into a purée. Transfer the puree into a bowl and set aside.

To make the koftas,

Mix together mixed vegetables, potatoes, breadcrumbs, green chillies, ginger, red chilli powder paneer ,cheese and salt.

Heat sufficient oil in a kadai.

Divide the mixture into equal portions and shape them into balls. Slide these into hot oil and deep fry till golden and crisp.

Drain on absorbent paper.

Heat butter in another non-stick pan.

Add tomato purée and cook for 2 minutes. Strain the ground purée and add to this pan.

Add fresh cream and mix well.

Allow the gravy to come to a boil. Simmer for 1-2 minutes.

Transfer the gravy into a serving dish, place koftas over it and serve hot.

Garnish it will Corainder leaves.

Tip

If you have breadcrumbs,you can use bread too. soak one slice of bread in water for like a min or two ,
take it out and squeeze the water out. Add it to the mixture.
