Ingredients
1 cup (240ml) heavy whipped cream
4 thin slices Bread

kiwi

Put heavy cream and sugar in a bowl of an electric mixer and whip until forming hard peaks
or you can ready made cool whipped cream
Spread some whipped cream on one side of two slices of bread (not too thin, but not too thick).
Place fruits on the two slices of bread. Put one layer of sliced fruits over cream on the bread.
Spread some more cream over fruits. Place another slice of bread on top of the cream.
Wrap the sandwiches with plastic wrap and refrigerate for 1-2 hours.
Remove the plastic. Cut crusts out and cut the sandwich into 4 pieces diagonally to make triangle shapes.
You can pack these sandwiches in kids lunch box.
Ragada Patties(Mumbai style)
Ragda Patties or Mumbaiya Ragada Pattice is a favorite chaat all over the globe , be it India or USA or canada or any corner of the world ,mumbai chat is famous worldwide.This mumbai street food is prepared with potato patties topped with white peas gravy(ragda) and two chutneys (green corinder and tamarind date chutney),onions and sev. It has combination of sweet ,spicy and tangy flavors.
Preparation time : 45 mins +(8 hours of white peas soaking)
Cooking time : 45 mins
Serves : 5-6
Ingredients
For The Ragada
1 cup vatana (dried white peas)
2 medium size onions finely chopped
1 tomato finely chopped
1 tsp turmeric powder (haldi)
1 tsp red chilli powder
1 tsp garam masala powder
1 tsp chat masala powder
1/2 tsp cumin powder
2 tsp ginger-garlic paste
salt to taste
2 tbsp oil
For The Patties
4 big size potatoes boiled
2 tbsp bread crumbs
salt to taste
1 tsp turmeric powder (haldi)
1 tsp red chilli powder
1 tsp garam masala powder
1 tsp chat masala powder
1/2 tsp cumin powder
Other Ingredients
oil for deep-frying
To Serve
1/2 cup green chutney
1/2 khajur imli ki chutney
1 cup sev
1 cup chopped onions
1 cup finely chopped coriander
1 tbsp lemon juice
Directions || How to prepare ragada patties
For the ragada
Soak the dried peas overnight.
In a pressure cooker , add oil and then add finely chopped onions.
Once the onions turn golden brown, add chopped tomatoes.
Once the tomatoes turns mushy or soft , add red chilli powder,garam masala powder,cumin powder,chat powder and mix them well.
Add approximately 2 to 3 cups of fresh water and pressure cook for 7-8 whistles or until the peas are soft.
Keep the cooked ragada aside.
For the patties
Boil, peel and grate the potatoes.
Add the red chilli powder , garam masala ,chat masala and cumin powder , bread crumbs and salt and knead to a soft dough.
Divide into 12 equal portions and keep aside.
Roll out each portion into a 75 mm. (3″) diameter circle. Place a portion of the ground filling mixture on each circle.
Bring together the edges in the centre to seal the filling inside the potato.
Press lightly on top to make a patty.
Repeat to make the remaining patties.
Shallow fry on a non-stick pan till the patties are golden brown and crisp.
How to proceed for serving
For serving, place 2 patties on a plate and pour the ragda over.
Top with all the chutneys. Sprinkle the onions,green chutney,tamarind and dates chutney,chopped coriander,sev and sprinkle some lime juice on top.
Serve immediately.
Tips
You might need to add some more cornflour to the potatoes if they are not dry enough.
Mix dal Pakora/Bhajji
Pakora (Fritter)or Bhajji’s is a famous recipe for Iftar and Ramadan. Pakoras are made in 90% homes at the time of iftar.Pakoray is a very tasty, light weight, and light saltish snack which taste good with tomato ketchup, raita or chutney.
I try to make different pakoras every time , sometimes aloo (potato)pakora, sometimes pyaz(onions) pakora and sometimes palak pakora.This is the first time, i tried this mix dal pakoras. I’m sharing with all this delicious and yummy mix dal pakora.
This is one of the most favorite pakora or you can say bhajji and there are so many sweet childhood memories attached to it. My mom use to prepare these Bhajji’s every tuesday to break her fast 🙂 and I used to wait for tuesday desperately :)Mix dal pakora can also be served at tea time and snacks or even as starters.
Preparation time:15 mins + 4 hours soaking of dals
Cooking time:10 mins
Serves : 4 to 5 people
Ingredients
For The Dal Mixture
2 cup chana dal (split bengal gram)
1/2 cup yellow moong dal (split yellow gram)
1/2 cup urad dal (split black lentils)
1 tsp jeera (cumin seeds)
a pinch turmeric powder (haldi)
2-3 green chillies
1/2 tsp asafoetida (hing)
2 to 3 cloves garlic
1 medium size onion finely chopped
1 cup chopped coriander (dhania)
salt to taste
oil for deep frying
Direction || How to make mix dal pakora
Wash and soak all dals for 4 hours.
Strain water and keep it aside.
In a grinder add cumin seeds,garlic,green chillies,turmeric powder,asafoetida and dal.
Coarsely grind them together.
In a bowl, mix coarsley ground dals,chopped onions ,chopped coriander,salt and mix well.
Heat oil on medium flame and deep fry all pakodas till they turn golden brown and crisp from al the sides.
Serve hot with coconut chutney or any chutney of your choice.
Cheesy Potato Nuggets Tree
Potato Nuggets are yummy little bites which can be eaten as snack at any time of the day.
Filled with cheese makes it an amazing delicious cheesy bites which melts in the mouth.
They are great party starters especially for kids party.
You can prepared them in advance and refrigerated for a day or two and use it when required.
You can serve these lovely nuggets with ketchup or any dips.
Preparation time: 20 min
Cooking time: 20 min
Serves: Makes about 500 gm or 35-40 Nuggets
Ingredients:
2 Cups Boiled and Mashed Potatoes
2 Tbsp shredded Parmesan Cheese
1-2 Shredded Garlic Cloves
1/2 Tsp Mixed Herbs (Oregano, Basil, Thyme, Parsley, Rosemary)
1 Tsp Chilli Flakes
1/4 Cup Bread Crumbs + 1/4 Cup Bread Crumbs for rolling
2 Tbsp Corn Flour
Salt to taste
Corn Flour Paste (2 Tbsp Corn Flour + 1/4 Cup Water mixed well)
Oil for frying
Direction || How to prepare Cheesy Potato nuggets
1. In a bowl take Boiled and Mashed Potatoes, 1/4 Cup Bread Crumbs, Corn Flour, Parmesan Cheese, Chilli Flakes, Mixed Herbs,
Shredded Garlic Cloves and Salt to taste and mix well. .
Prepare a nice dough of the mixture , divide the dough into 3-4 palm size ball.
Take about a palm size ball on greased palm. Then roll the same in long thin pipe shape (about 1/4? in diameter).
Then cut in to about 1/2? long and using fingers lightly press edges to give it a shape of nuggets.
Prepare the rest of the nuggets in same way.
3. Now take the Nuggets and dip it in Corn Flour Paste and then roll it in Bread Crumbs and press lightly with hands and keep aside.
Prepare rest of the nuggets in same way.
Put the prepared nuggets in refrigerator for 30 min to set.
Now heat oil in a deep pan on medium and fry Spicy Potato Nuggets till golden brown stirring in between.
It will take about 2-3 min on medium to high heat.
Remove the fried Nuggets on paper napkin and serve hot with Sauce.
Falafel rocks(Chickpea roll)
Falafel made using chickpeas is a popular Middle Eastern chick pea patty. Falafel is stuffed in pita bread with salad and sauce. Falafel is quite popular as a replacement to meat and its high in protein.This is the based snacks across the world and my husband most favorite dish.
He was missing falafel quite a long time and hence I decided to try this recipe at home.I had no idea how this patty taste likes but with all the inputs from internet and from my husband , I could manage to prepare it at home. And I guess what it turned out to be good and my husband was quite impressed and amused.
Trust me try this recipe at home and you never know you might get the full marks and a pat on your back as well:) Its very very simple and healthier too.
To make it more healthier option these can be baked instead of deep frying.You can also prepared all purpose flour(maida) and wheat (atta) ki roti if you fail to arrange any Pita bread.
You can serve this with tahini sauce or hummus whatever you can arrange. I prepared hummus at home. please check my recipe to prepare hummus.

Ingredients:
1 cup dried chick peas (kabuli chana)
2 tablespoon chopped parsley(optional)
2 tablespoon chopped coriander
1 teaspoon cumin seeds
1 teaspoon garlic chopped.
2 small onions finely chopped.
1 teaspoon red chilli powder
1/4 cup all purpose flour (plain flour, maida)
Also need oil to fry
Salt to taste
For serving
2 cups of thinly sliced lettuce
2 medium size chopped tomatoes
4 pocket pita bread
Direction || How to prepare Falafel
Soak the chickpeas in 3 cups of water for 8 hours or overnight After soaking chickpeas will be about 2 and half time in volume.
Transfer the soaked chick peas into the pressure cooker and start steaming turn the heat down to medium and cook for about 4 minutes.
Chickpeas should be just tender not very soft.Now remove it from the pressure cooker and rinse them well and drain them completely .
Add chickpea to a blender along with chopped onion, garlic, cumin seeds, red chilli powder and parsley(if you cannot arrange parsley replace it with coriander as I did).
Do not add any water ,Process it until it reaches a coarse texture. The mixture should bind well otherwise it may fall apart while frying. If needed add few spoons of water.
Add 2 tbsp of all purpose flour which helps it to bind well.
Refrigerate for an hour. Take small portions and make oval balls. If using flour, you may flatten them a bit otherwise they tend to break while frying.
Heat oil in a fry pan on a medium flame. Drop a small portion of the mixture to check if the oil is hot. It must float and not sink, this means the oil is hot enough. Do not over heat the oil, as they may brown the balls without frying them inside.

When they are golden fried, drain them on a kitchen towel.
Serve them with a tahini sauce or hummus or any favourite dip.

Serving suggestion
Take pita bread or naans or roti and heat over the skillet on medium high heat both sides lightly.
Place the falafel in the center of the bread and add hummus over with it and then fill chopped lettuce so it 1/3 full and now fold the flat bread.
It’s best to serve the rolls with hot falafels. Falafels can be easily re-heated before serving using an oven or toaster oven.
