Avocado Pinwheel Sandwich
Easy-to-make pinwheels also called as roll ups is a very healthy and quick appetizer for get togethers or parties.
They are great alternative to the sandwich and kids seem to love them due to their cute shape and size.
Threading them on skewers or toothpicks to help them hold their shapes, makes a fun presentation for school-aged kids.You can even pack these pinwheels for lunch for kids, so no more lunch box boredom!
Pinwheels be prepared using meat and veggies with some spreads or even the plain vegetarian roll ups are very tasty.
Today I am going to share you healthy Avocado pinwheel sandwich.I used bread to prepare these pinwheels with avocado and cheese.You can even use any tortilla or whole wheat roti instead of breads.
So let’s start with it.
Preparation time : 10 mins

Serves : 1 or 2
Ingredients
1 avocado
Juice of 1 lime
1 tsp salt
4 slices bread
1 slice of cheese
1 or 2 bamboo skewers
Directions || How to make Avocado Cheese Pinwheels
In a small bowl, mash avocado with lime juice and season with salt.
First cut the edges of all the breads
Flatten the breads with the roller.
Apply mash avocado to the first slice of the bread.
Place one cheese slice on the second slice of the bread.
Flatten and apply ketchup on the third slice.
Finally apply mash avocado to the last slice of the bread.
Place all the slices one above the other and roll them
together
Now cut the roll into ½ inch wide pinwheels gently.
Thread the pieces horizontally onto bamboo skewers(snip off the pointy tips for safety)..
Serve your kids with this real quick ,simple and yummy dish.
Notes
One large bread will make about 4 pinwheels.
Cold coffee with ice cream

2 tbsp Instant Coffee powder
1 tbsp cocoa powder
4 tbsp Sugar
2 Cold Milk – 3 cup
1 or 2 ice cubes
2 to 3 ice cream scoops
Chocolate syrup as needed
3 tbsp Hot water
Directions || How to prepare Cold coffee
In a small bowl mix hot water with coffee powder and mix well.Let it cool down.
In a mixer add a cocoa powder ,coffee mixture,sugar and then put in milk, ice cubes and blend until creamy.
Take a glass, drizzle with chocolate syrup to create a pattern.
Pour this in a glass and you can add a scoop of icecream over it and drizzle with chocolate syrup.
Serve chilled.
Palak(Spinach) pulao rice
Palak (Spinach) rice is very healthy and nutritionist flavorful dish and quick to make any time even for the lunch box.The rice is cooked in a thick paste made from pureed spinach and seasoned with many spices.This is very quick and a easy rice recipe and it makes a great lunch box meal filled with nutrition of spinach and rice,

Ingredients
2 cups Cooked rice
200 grams Spinach Leaves (Palak), rinsed and pureed
1 tsp shahi jeera (cumin) seeds
1 cinnamon stick
1 star anise
1/2 tsp Turmeric powder (Haldi)
1/2 tsp garam masala powder
1 tsp red chilli powder
2 green chillies slit
1 tbsp ginger-garlic paste
1 Tomato pureed or finely chopped
2 medium size onions finely chopped
2 tablespoons oil or ghee
1 tbsp lemon juice
Salt as required
Directions || How to prepare Palak (Spinach) Pulao
Heat oil in a heavy bottom pan over medium heat.
Add cumin seeds, cinnamon stick ,star anise and sauté for a few seconds.
Add onion and ginger-garlic paste and stir fry till it turns golden brown
Stir in the tomatoes and turmeric powder,red chilli powder and garam masala powder and saute until the tomatoes have softened.
Once the tomatoes have softened, stir in the spinach puree and salt. Cover the pan and allow the spinach to cook until soft.
When you open the pan you will notice that the spinach has released a lot of water. Turn the heat to high and allow the water to evaporate.
Once most of the water is evaporated from the spinach, stir in the cooked rice and combine well.
Check the salt , add lemon juice and adjust to suit your taste.
Turn the heat to low, cover the pan and simmer for a few minutes.
After couple of minutes of simmering, you will notice that the rice has absorbed all the spices and has a rich green color.
Turn off the heat and the Spinach Rice is ready to be served.
Homestyle Potato chips
Homestyle potato chips is really loved by my kids.It’s fun and easy to cook for them.I like to use olive oil because it has less trans fats, but you can use any oil of your choice.
Preparation Time : 30 mins
Cooking Time : 10 mins | Serves : 4
Ingredients
4 medium potatoes, peeled and sliced paper-thin
2 tsp turmeric powder
salt as required.
1 quart oil for deep frying
Direction || How to make Potato chips
Transfer the potato in the cold water as you slice.
Washed the potato well.Drain, and rinse, then refill the bowl with water, and add the salt.
Let the potatoes soak in the salty water for at least 15 to 30 minutes.
Drain, then rinse and drain again. Add turmeric powder and salt to the potatoes.
Heat oil in a pan . Fry potato slices in small batches.
Once they start turning golden, remove and drain on paper towels. Continue until all of the slices are fried.
You can even serve it as a side dish with dal rice or ketchup.
Tips
Applying salt to the sliced potatoes prevents it from turning black.
You can also use deep-fryer and set it to 365 degrees F (185 degrees C) for frying.
