Sheroes Summit 2016

2016-08-28-16-06-23-60727th August 2016, the day when I got an opportunity to meet the beautiful talented women across India through an event ,the 4th Edition of the Sheroes Summit held at Hotel Novotel , Juhu Mumbai. It was a well organized event, with the purpose of bringing ‘Sheroes’ together and discussing important issues like work-life balance and future of work.
The event started with an introductory speech by none other than Sairee Chahal, Founder of Sheroes.

Sonam Kalra(founder Sufi Gospel projects) shared her experience and journey of her career till now and she introduced her new song ‘Bol’

Got to hear the wonderful ,talented , successful female CEO like Reena Chhabra (CEO,FSN Brand, Nykaa).
She spoke about the challenges and struggle she faced during her career growth. Inspiring words like work for what you are passionate about , follow your passion and success will follow you.

“Most powerful thing is a simplest thing ” and we need to find the simple thing to become powerful in our life.

Shinjini Kumar (CEO,Paytm Bank) what an outstanding brilliant speaker she is !! I was very much impressed by her journey from a small town girl to CEO of Paytm leading the payments bank initiatives.

During the tea break , I got to meet her personally and thanked her for her aspiring speech and yes of course a selfie 🙂

After a tea break , the entire auditorium was lightened up by the humorous speech by Neeti Paul (Stand up Comedienne)

The event continued with many speakers like Venky Mysore (CEO & MD , Kolkatta Knight Riders), who shared his long and  successful career in insurance and finance.And yes the day went on and on with many such inspiring talks and speeches.

The day ended on another laughter note, when Varun Grover, stand-up comedian, who shared his funny experiences
about feminism.

For me the takeaways were great , the cute little monster soft toy which my girls would definitely love and yes the sheroes mug which will always reminds me to”I Take Charge”

Apart from the enlightening leanings, knowledge gains, and inspiring stories of fearless women to the wonderful people I got an opportunity to meet new friends and the relationships I built with the sheroes family is my biggest gain.

I certainly feel attending this Summit was beneficial for me, and would continue to contribute by posting blogs and making me realize that whatever you do in life
be fearless and just keep going like a SHERO.

Healthy dates(Khajur) nut balls rolled in Pistachio

Khajur (Date) is the main food consumed in the month of Ramadan. It has many health benefits like dates are easy to digest so they don’t exhaust the fasting person stomach.Dates decrease the great hunger feeling of the fasting person and it also prepares the stomach to receive the food after being inactive through out the day with activating the release of digestive secretions and juices.
Dates protect the fasting person from having constipation as a result of changing meals times or as a result of having low fiber amounts in meals.

Not only in Ramadan but dates can be consumed even daily , normally I like to prepare (Khajur)dates nut balls at home and preserve it for a week in a small quantities.

These ladoos can be packed as a snacks in your kids snack box too.These ladoos can be served as a great snacks as it decreases the hunger.

And its very simple and easy to be make and we don’t need any ghee or oil and no sweetener is needed either.

Preparation time : 15 mins
Cook time : None
Serves: 8

Ingredients

20 large dates
¼ cup mixed nuts (almonds, cashews, walnuts)
¼ cup pistachio finely chopped.

Directions || How to prepare mixed dates and nuts balls

Removed the seeds off the dates.

Add the dates to a food processor and blend it well.

Then add the almonds , cashews and walnuts to the food processor and grind the dates and nuts as such that the mixture should result in a sticky mass

Roll the mixture in your hands until it forms a ball.

Place the pistachio onto separate plates and then roll the ball in the pistachio until fully covered.

Continue to do so until all of the dates rolls have been coated.

Keep chilled until ready to serve.

Keeps for about one week fresh, in the refrigerator.

Besan Rava Laddoo

Laddu or laddoo(in marathi) are ball-shaped sweets popular in the India.Laddus are made of flour, minced dough and sugar with other ingredients that vary by recipe.
Rava and Besan laddooo is famous in Maharashtra and hence wanted to try combination of both the ingredients.
My kids likes rava,so this summer vacation i thought of preparing few laddoos ready to eat at home which will boost their energy as Rava(Sooji) provides great energy
and it has many health benefits.
Rava Besan ladoo is a simple and easy recipe . Rava Besan ladoo is made with roasted rava (sooji),besan (gram flour), coconut, ghee, sugar and nuts.

Makes : 20 laddoos

Preparation time: 20 minutes

Cooking time: 20 minutes

Ingredients:

1 cup sooji coarse, rava or semolina
1 cup besan (gram flour)
1/3 cup coconut powder
1/4 cup ghee
3/4 cup fine sugar
1/2 cup badam powder
1/4 teaspoon cardamom powder
1/4 cup milk boiling hot

Direction || To prepare Rava Besan Ladoos

Heat one tablespoon of ghee in a pan over medium low heat

Add rava and roast until it changes the color lightly this should take 6-7 minutes.
It is important to stir continuously making sure rava roast evenly.
Once its roasted well ,turn off the heat and transfer it in a bowl.

Similarly add one more tablespoon of ghee in the same pan and roast besan for around 6-7 minutes on a medium low flame.
Take it off the pan.

Add coconut and roast stirring continuously for about 2 more minutes, make sure it does not turns dark brown.

Now add all the ingredients roasted rava ,besan to the coconut powder and sugar stir until everything mix well. Turn off the heat.

Add about 2 tablespoons of hot milk, mix it well mix should be moist add more milk as needed.

Allow the mixture to cool slightly.

Make about 20 ladoos by pressing about 1-1/2 tablespoon mixture between your palms.

Serve them after at least one hour.

Ladoos can be stored in air tight container for about 10 days.

Musk melon Milkshake

I happened to visit the market this weekend and found this beautiful looking lucknowi kharbuja.
Muskmelon know as Cantaloupe and well known as kharbuja in Hindi is also summer’s best fruit.Its high water content helps you stay hydrated during the hot season.
A rich source of Vitamin C and its also good for your digestive system. The summer heat is tempting me to prepare lot of drinks for me and my family so I made up my mind to try out this one more thirst quenching, juicy, sweet, refreshing drink of summer.Check out the recipe below.

Muskmelon_milkshake  Ingredients

1 musk melon

1 cup chilled milk

1/2 tsp rose water

1/4 cup cream (optional)

Scoop of vanilla icecream

Direction || How to prepare musk melon milkshake
Put all ingredients, except ice cream in a blender jar and blend smooth.

Transfer into a glass top any flavored ice-cream of your choice and serve chill

Left over Rice and Chicken cutlets

Left_over_rice_and_chicken_cutletsDo you always seem to have leftover rice and chicken curry on hand and you don’t want to waste them, no need to worry !!! Here is some easy way to turn your leftover white and left over chicken into a new side dish!
I tried it out and it really turned out delicious.You too give it a try and do leave your feedback or comment about your experience.

Preparation time : 10 mins

Cooking time : 10 mins

Serves : 4

Ingredients

1 cup left over plain steamed rice
1/2 cup left over chicken pieces from the chicken gravy
1 tsp ginger garlic paste
1/2 small onion, chopped
1 tsp of Red Chilli powder
1 tsp of Garam Masala powder
1 egg beaten
1/4 cup chopped coriander leaves
1/2 cup of Bread Crumbs(optional)
salt as per taste
Oil for cooking

Directions | How to make rice chicken cutlets

Pick up all the chicken pieces from the curry and shred them all.

In a bowl mix all the ingredients (rice,shredded chicken,ginger-garlic paste,chopped onions,red chilli,garam masala, chopped coriander,bread crumbs)
and knead lightly to form a soft dough.

Divide the mixture into equal portions. Shape each portion into a round and flatten slightly.

Dip each patty into the egg beaten and shallow fry or pan fry in hot oil till crisp and brown.

Serve hot with tomato-garlic sauce or any chutney of your choice.
Tips:

You can add any veggies of your choice to add more nutrition to this recipe.
