Kothimbir vadi-Coriander Patties ( micro-oven)

Kothimbir vadi One more favorite Maharashtrian snack made from coriander leaves and chickpea flour.
Kothimbir vadi can be served as snacks or an appetizier for lunch/dinner.
It can be served with any chutney or ketchup.

 

Prep time:20 mins

Cooking time: 10 mins
Serves: 4

Ingredients

For Dough

1 or 1½ cups of chopped coriander/cilantro leaves(2 bunches)
2 cups of besan – chickpea flour (add more if required)
½ tablespoon turmeric powder
2-3 green chillies paste(add more if prefer having spicy)
4 cloves of garlic paste
1 tablespoon sesame seeds
¼ or ½ cups water
a pinch of hing
salt as required

For cooking

¼- ½ Cup oil to fry

Method

Combine all the ingredients together in a bowl and knead to make a firm, smooth dough.

Shape it into a cylindrical roll .

Apply oil at the base and sides of a microwave safe cooker or bowl.
Cover it with its lid or a microwave safe lid.

Microwave on high for 3 to 5 minutes or till done.

The mixture should be cooked and firm.

Insert a knife or toothpick and if it comes out clean, the vadi is cooked well.

Let it cool.

Then remove the steamed cylindrical roll on a tray and cut it into oval shaped.

Shallow fry or pan fry in hot oil till crisp and browned.

Serve Kothimbir Vadi hot with green chutney or tomato sauce or you can it have it just with tea/coffee.

Tip

If you don’t have microwave or microwave bowl you can even steam it in gas steamer.
Healthy tips to avoid frying you can just have the steamed vadi instead ,even the steamed vadi’s tastes good the only thing will be missing its the crunchy taste

Having Kiwi fruit has many health benefits in the month of Ramadan since fasting can also lead to increased acidity levels, which might lead to indigestion.The actinidin contained in kiwi fruits can also help aid in the digestion of foods that are of dairy, meat and legume source hence I prefer to have this fruit but normally they are little sour in taste , so I don’t enjoy them much. Yesterday I found the Kiwi’s at home were little ripe.I just didn’t wanted to discard them off , I thought of preparing its milkshake but with Banana and to my surprise I discovered Kiwi and bananas go together very well.

So If you have super-ripe and sweet bananas that are either fresh or frozen and your Kiwis have ripened so that they are quite sweet too, instead of super-tangy, then combine the two together in a blender this is what you get – a truly healthy sweet milkshake .. Click here for recipe..

1 cup Milk
2 Kiwis (preferably ripe and sweet – but if you slightly tangy Kiwis, they’re fine too!)
2 Bananas (ripe – fresh)
1 cup crushed Ice
1 tbsp honey

Optional ingredients.

1/3 cup yogurt(for smoothie)
Sugar, to taste

Directions || How to prepare Kiwi-Banana milkshake

Cut the kiwi and banana into small pieces and add it in a blender.

Then add 1 tbsp of honey to it.

Blend them together to form a puree well.

Then add 1 cup of milk,crushed ice and a little sugar as per the sweetness desired and just blend.

Ta -dan .. your healthy Kiwi-banana Milkshake ready . Serve immediately and Enjoy !!

Note : If you need to prepare a smoothie of it , just add 1/3 cup of yogurt and just give it a blend. Your delicious smoothie ready !!!

Ingredients

1 medium size watermelon, peeled, deseeded and chopped

1 or 2 tbsp mint leaves/pudina

1 tbsp lemon juice

black salt as required

ice cubes (optional)

Direction | How to prepare watermelon mint juice

Add all the watermelon,lemon juice  and mint leaves in a blender , please do not add water to it.

Blend it well.Pour the watermelon juice in tall glasses and sprinkle some black salt from top.

Add few ice cubes if required.

Garnish watermelon juice with some mint leaves and serve it cool.

1 cup frozen or fresh strawberries
2 cup milk

2 tbsp plain yogurt
1/4 cup sugar
8 -10 ice cubes

DIRECTIONS || How to prepare Strawberry smoothie

Rinse the strawberries and then drain them.

Slice off the green leafy part from all the strawberries and then chop the strawberries.

Add the chopped strawberries to a blender jar.

Add 2 cups chilled milk,plain yogurt and add sugar as required.

Blend it together till smooth and creamy.

Pour in tall glasses and serve strawberry smoothie immediately.

Add few ice cubes if required

Tips

you can also add a scoop of vanilla ice cream or strawberry ice cream and have a strawberry ice cream shake.
