Chicken Soup in pressure cooker(treats bad cold and cough)

Chicken soup is a soup made of chicken,simmered with water and various other ingredients.Chicken soup has acquired the reputation of a folk remedy for colds and influenza, and in many countries is considered a comfort food.

Try this quick and easy chicken soup for your kids at home to treat cold or cough , it really works.

This chicken soup can be served with rice too or simple bread/plain roti.


Preparation time : 5-10 mins

To prepare chicken stock in pressure cooker

Ingredients

100 gm Chicken cut into medium size pieces and washed thoroughly
1 bay leaf
3 pepper balls
2 cloves
1 finely chopped small Onions
1 finely chopped small tomato
1 tsp Turmeric powder
½ tsp black pepper powder
½ tsp garam massla powder
1 tsp Ginger-garlic paste
1/2 cup water
Salt to taste
2 tbsp Oil

For Garnishing

few coriander

To prepare soup

1 tbsp of cornflour
½ tsp black pepper powder

To prepare chicken stock

In a pressure cooker, heat 1 tbsp of oil, Once oil is hot enough, add bay leaf , pepper balls ,cloves ,finely chopped onion and sauté till it turns golden brown.
Now add finely chopped tomatoes, once the tomatoes gets mixed well,add chicken pieces and salt to taste.
Then add ginger-garlic paste ,garam masala powder, black pepper powder abd turmeric powder. Saute till raw smell from ginger-garlic goes away.
Add finely chopped coriander and add around 1 cup of water,put the lid on.Cook until just 3 whistles as chicken doesn’t take long time to cook.

To prepare chicken soup

Add the prepared chicken stock from pressure cooker in a vessel.
Add water to the cornflour and prepared a thick paste , add this cornflour paste to a chicken stock.
Add black pepper powder and stir it well.
Let the soup boil for 5-7 minutes on a high flame.
Serve hot to a kid or a person suffering from bad cold or cough.

3 fish pieces

100 gms all purpose flour(maida)

1 packet fish masala

2-3 garlic cloves

2 limes

salt as per taste

Step 1 : Apply fish masala and maida and coat it all over the fish.

Step 2: Fry the fish over the pan

Step 3 : Preheat oven on 380 C and brush the baking pan with butter, cut the lime and garlic cloves and place it over the fish as shown.

Bake the fish for 10-15 mins on 380 c.

Malai Methi Matar

Malai methi matar as the name of this recipe explains it’s made up from malai (heavy cooking cream),
methi (fenugreek leaves) and matar(green peas). It’s an flavorful and creamy sweet and smooth north Indian
dish. This recipe is good for kids ,as fenugreek is good for health and they will definately enjoy this dish
as there is no bitterness or bitter taste of fenugreek(methi) as the presence of onions,cashews and cream
makes the gravy sweeter and creamy.

Do try this recipe , it taste almost like restaurant and my kids loved it.
Serve it with roti/naan or plain rice.

Ingredients

For malai methi matar recipe:

2 cups Fenugreek leaves (methi leaves) plucked the leaves, measured and then washed
1 ½ cups Green peas boiled or microwaved
½ teaspoon Cumin seeds
1 medium size finely chopped onions
1 tomatoes finely chopped
5-6 cashew nuts
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp cumin powder
1 tbsp kasturi methi
1 tsp Garam masala

1 cup Water
¼ cup Heavy whipping cream or fresh cream or malai
Salt to taste

1 tablespoon Oil

Directions || How to make Malai Methi Matar

Boil the green peas in pressure cooker or cook them in microwave.
Pluck the methi leaves, measure 2 cups then wash very well.
sprinkle some salt over it and keep it aside for 10 minutes.

 

 

 

 

 

 

After 10 minutes squeeze out all the water from methi using your hand. This is the trick to get rid of the bitterness of the methi.
Chop the leaves finely. Keep it aside

Direction for making paste:

Heat the oil in a pan on medium heat. Add cumin seeds and onions.

 

 

 

 

 

 

 

Mix in onions and cashew nuts. Cook them till they are soft and translucent.

 

 

 

 

 

Next add turmeric powder,red chilli powder ,cumin powder and kasturi methi. let the spices cook well. Let it cool down a bit.

 

 

 

 

 

 

Once cooled add this to a blender along with cashew nuts.


Grind into a smooth paste.

 

 

 

 

Heat the oil in a pan on medium heat in the same pan.
Then add prepared onion paste. Cook till all the moisture evaporates and it starts to leave the sides of the pan.

 

 

 

 

 

 

Add green peas and chopped methi leaves. Mix well and cook for 2 minutes.

 

 

 

 

 

 

Add water and let it come to a boil.
Stir in the cream.

 

 

 

 

 

 

 

 

Add remaining salt and garam masala. Mix well and cook for a minute.

 

 

 

 

 

 

Let it simmer for 3-4 minutes and then turn off the stove.
Serve it hot with roti/naan or plain rice.

Sev Puri Burgers

Sev Puri is another famous chaat snack from the lands of Mumbai. You can either prepare Dahi Sev batata puri those are prepared with round puri with masala stuffed in it or you can make it with flat puri.
I gave this recipe a little twist , a new form of having these puris so that the kids would just won’t resist it , yes the innovative Sev Puris Burgers
This recipe is absolutely simple to make if you have your puris, sev and chutney ready.
All these three ingredients can be brought ready made or you can prepare it at home.

Preptime: 10-15 mins

Cooking time: 5-10 mins

Serves: 4 + people

Ingredients

2 medium size boiled and peeled potatoes
2 tbsp curd
½ cup tamarind chutney
½ cup mint coriander chutney
½ cup red chutney
chaat masala as required
1 tablespoon red chili powder
1 cup fine sev
15-16 puris
1 cup sev
1 to 2 tsp lemon juice (optional)
black salt

Mix chopped potato, dahi,onion ,1 tsp of green chutney ,lemon juice,salt and chat masala.

Arrange the puris on a plate , you can decide the puris to be served each plate.

Now top each puri with the prepared mixture.

Now top the puris with mint coriander chutney, and tamarind chutney one on top of the other

Now cover all the puris with puris like a burger.

Apply red chutney at the edges of all the puris one by one and sprinkle sev over it.

Ta Da.. the new style Sev Puri Burger style is ready to be served to your naughty kids 🙂
